Wild Rice Casserole I

This is a delicious dish with a creamy risotto-like consistency and wonderful presentation. It's also super easy to make. I followed the suggestions of the other reviews and: 1) added 2 crushed garlic cloves, 2) used 1/2 of seasoning packets and 1/2 onion called for, 3) added 1/2 Cheddar & 1/2 Parmesean, 4)added water chestnuts and stirred 3/4 of way through cooking. I also didn't add the cheeses until just prior to serving.

Hearty Beef Enchiladas

These enchiladas were absoulutely fabulous. The whole family devoured them, including our 3 year old!I used a red onion and added a can of black beans and I DID NOT fry the tortillas and it was amazing. Recipe as given made 8 hearty enchiladas. YUMM!

Easy and Delicious Chicken

We thought this was very good served over whole wheat broad noodles and with these variations: Sun dried tomato vinaigrette dressing instead of italian, and I reduced the cream cheese a bit. After the chicken cooked, I transferred the sauce to a pan and added water/flour mixture to thicken. At the very end I tossed in some leftover roasted veggies I had on hand (squash, zucchini & onions). Very, very flavorful!

Zucchini and Blue Cheese Side

Absolutely Delish...and super easy to boot! I took the advice of other reviewers and drained off some of the liquid from the tomatoes. It was a total hit.

Stuffed Flank Steak

Very flavorful & easy. I pounded my Flank Steak and rolled it with the prepared rice mixture. I also made a few substitutions; celery instead of water chestnuts, brown rice instead of long grain, white onion for green and brown sugar for molasses.

Double Tomato Bruschetta

Very, very good flavor. It got rave reviews from our guests. I toasted both sides of the bread to keep the tomato side from getting too soggy and added a bit more minced garlic.

High Temperature Eye-of-Round Roast

Very, very easy & very, very good! It is by far the best recipe for this cut of meat I have found. I served it with a brown gravy made from the pan scrapings, veggies and flavored rice. YUM!
