Roast Sticky Chicken-Rotisserie Style

I guess low and slow is the way to go because this is the most tender and moist chicken I've made to date. I made one larger whole chicken and baked it for the total of 5 hours. It was perfect. Everyone loved it.

Spicy Scarborough Chicken Marinade

Thank you Recipe Group for finding this delicious selection. Because my husband doesn’t like anything too spicy, I used a jalapeño pepper instead of the habanero. I cut the chicken breasts in half lengthwise and marinated it for 6 hours but wished I had marinated it longer. Next time I will marinate it overnight to infuse more of that wonderful flavor. Thanks Pam for a great marinade!

5 Minute Microwave Cornbread

I am not a big fan of microwave baked goods . . . unless of course it’s almost 100º out like today and I don’t want to run my oven, then I become a big fan. I surprised myself by liking this recipe very much. You can actually make this in five minutes and it’s very good. I don’t think it’s quite as good as an oven baked cornbread and I miss the browning of the oven baking but you can’t beat this if you want to make a good cornbread in very little time.

Awesome Slow Cooker Pot Roast

This is an ideal dish for a busy day. I made a few alterations. I seasoned and floured the beef and then seared it very well in a cast iron skillet before putting it in the crock pot. Also, I don’t like the overpowering flavor of the soup mix, so I used half the amount and sprinkled a little beef bouillon in with the mushroom soup. It couldn’t be easier: make it and forget it. This was perfect served over rice.

Mango-Peach Smoothie

This is a fabulous smoothie. I used 1% milk, frozen mangos and a fresh ripe peach with the orange juice. The consistency of this drink is perfect. We loved it.

Cheddar-Bacon Mac and Cheese

This is so easy and tasty. I appreciated the fact that the bacon added nice flavor without overpowering the dish. I used a package of cheese ends I got at the deli which was a mish-mash of different cheeses instead of plain cheddar and it worked perfectly. I added all the cheese to the milk mixture and topped the casserole with buttered cracker crumbs as a personal preference. It was creamy and delicious. Added note: This is also a hit made with Johnsonville Breakfast Sausage instead of the bacon.

A Different Carrot Raisin Salad

Strawberry Cream Roll

This tastes as good as it looks, and it looks incredible. I made the recipe exactly as written with the exception of adding extra strawberries, which I folded into the cream mixture. This is an elegant and delicious dessert which is perfect for company.

Zucchini Patties

These are fast and easy and a great way to use the zucchini from your garden. I always wring out my zucchini in a clean cloth to remove excess moisture before adding it to the batter. Other than that I made them exactly as written. They were very good, but next time I will add more jazz and/or serve them with sour cream.

Sweet Honey French Bread

I don’t use a bread machine so I proof the yeast in the water, honey and sugar that I had warmed to 110º. If you are planning to use the dough hook on your KA to knead – don’t. The dough ball is so small that the hook doesn’t pick it up or at least mine didn’t. I manually kneaded it by hand and baked it at 350º for 25 minutes. The bread is very, very subtly sweet and the honey doesn’t come through as much as I had hoped although I added a tablepoon of honey, however I did not drizzle the honey while baking. It still was very good and makes a lovely little loaf of bread. We thought it was very good.

A Surprise-Inside French Toast

If you are looking for a delicious breakfast to serve to your overnight guests, you may want to try this. I thought it was one of the best breakfast recipes I have tried. I used real eggs and 1% milk, and gave it plenty of time to soak into the bread. After it started to brown, I used a cover on the pan to make sure it was cooked throughout. It’s very pretty sprinkled with powder sugar and served with sliced fruit and real maple syrup.

Very simple and good. I was too inpatient to wait for the strawberries to freeze but the drink was still very good. Had I allowed the strawberries to freeze, I’m sure it would have been even more refreshing.

Simple and Delicious Kale Soup

I thought this was one of the better marinades I have tried. It had the perfect balance of flavors. I used flat iron steak and marinated it for 8 hours. It was perfect. This will be my go to marinade in the future.

Bow Ties with Sausage, Tomatoes and Cream

This is a quick, easy and delicious pasta dish. To make it just a smidgeon less calories, I used chicken sausage. Also, I didn't drain the canned tomatoes and added a little less heavy cream which made an excellent lighter sauce. We really enjoyed it.
