Grilled Masala Chicken with Vegetables

A light and healthy dish, but it’s a little on the bland side. Next time I would increase the seasoning to kick it up a notch. I cut the chicken into medallions, gently pounding them to a uniform size and then brined the medallions. I warmed the olive oil and added the garlic, salt & pepper an hour before preparing to allow the garlic to infuse into the oil. I love the clean up – it’s a breeze.

Recipe Group Selection for May 31, 2014 – I’m a little behind at getting to this recipe group selection, but I’m so glad I finally made it because it is a wonderful dessert. Fast, easy, and delicious. I also toasted the almonds as others had recommended.

A very nice breakfast that was easy and yummy. The cinnamon seemed a little aggressive to me so I cut it in half which worked out very well.

Salsa is always good, and this is no exception. I ran out of tomatoes so I use this in my grilled cheese sandwich instead. It makes a great addition to a grilled cheese sandwich too.

Easy Fava Bean Salad

This is an easy, tasty, and healthy spread, wonderful served on toasted baguettes. Next time I would add additional chopped tomatoes. It doesn’t look too appetizing so that’s the only downside, but I still might serve it for a gathering, challenging friends to give it a try.

This is perfect for those busy nights when you want something simple and nourishing. I didn’t have the type of spaghetti sauce the recipe calls for, so I used canned diced tomatoes and added seasonings. I served it with rice topped by freshly grated parmesan.

A lovely variation on an apple crisp, perfect topped with a scoop of vanilla ice cream. I reduced the recipe and estimated the amounts to use up some ingredients.

Sausage-Stuffed Mushrooms

After reading the only review for this recipe, I decided to not bother cooking the mushrooms and meat separately, but stuff the raw sausage mixture into the mushroom caps. I also halved the amount of breadcrumbs the recipe called for. The result was a moist and delicious appetizer. I baked them at 350° for 30 minutes. The recipe could use a little more seasoning to me, but it was still very good.

Oven Baked Parsley Red Potatoes

Dutch pancakes are so easy and the perfect breakfast for busy mornings. I love them served with fresh fruit and pure maple syrup. Half this recipe fits perfectly in a 7 inch cast iron skillet.

After reading the reviews, I didn’t bother with the vegetable oil and wrapping them in aluminum foil which worked out perfectly. These are very creamy, and not too sweet.
