Carol's Baked Ziti Casserole

I liked that it was easy to prepare, but I still added the ziti and the ricotta mixture together making one layer. Also, it looked like it would be on the bland side so I added some garlic salt to the ricotta mixture and sprinkled dried basil on the sauce. My goal in preparing this was to use up the cheeses that had been hiding out in my freezer. I couldn’t tell you all the different cheeses I used, but it worked out great.

Ginger Snaps IV

I made these as stated in the recipe, and as the other reviews have noted, they are soft and cake-like. These cookies had excellent flavor and were quite addicting. I prefer a little crunch, so the next batch I baked an extra two minutes and it came out fine, not quite a snap, but some crunch.

Peach Salad with Raspberry Vinaigrette

Chicken Soup With Pasta and White Beans

I used orzo pasta in my homemade chicken broth, and instead of using canned tomatoes I diced some plum tomatoes from the garden. This is very simple and very good.

Very simple and tasty, this is a nice accompaniment to the main dish. If you don’t have a clay cooker, which I don’t, I would increase the baking time. Also, I didn’t have any fresh tarragon so I used some dried herbs de provence. It worked out great.

Turkey Casserole

This is delicious cheesy goodness in a turkey casserole. I made a few modifications because my spouse doesn’t care for peppers or mushrooms. I simply substituted a carrot. Out of sheer laziness, I sautéed the celery, onion and carrot together in the butter. It worked out fine. Also, I used a mish-mash of different cheeses (cleaning out the frig.) This was yummy.

Amazing Whole Wheat Pizza Crust

I admit I still prefer the traditional pizza dough, but this was nice for a change. It baked beautifully on my cast iron pizza pan and had good flavor and texture.

Honey-Orange Bison Back Ribs

This was my first taste of bison and I invited some friends to give it a whirl also. It was a wonderful evening with everyone enjoying these delicious ribs. I followed the recipe exactly, marinated the ribs the full 24 hours. The general consensus was the marinade/sauce needed a little heat, but they were still very tasty and everyone was looking forward to having them again. It was a great evening with great food.

Spinach Alfredo Sauce (Better than Olive Garden®)

Recipe Group Selection 8/31/2013 - Let me just say, thank goodness I have a gym membership. I used the full 10 oz. package of chopped spinach which ended up being about 1 cup of chopped spinach. It was very good and everyone enjoyed it but it's not something I would make too often.

White chocolate cinnamon and spice cookies

I confess I don’t care for almond extract so I substituted vanilla extract. These are addicting, a nice change from the usual toll house cookie. I cut back the nutmeg because I used freshly grated which is always stronger than the powdered nutmeg in the container, and I didn’t want it to compete with the cinnamon flavor which I love. It came out perfect. Yum!
