Shrimp with Broccoli in Garlic Sauce

This is quick and easy and perfect for those busy nights. I substituted 1 tbsp of sesame oil and 1 tbsp of olive oil for the peanut oil. I wish I had added the cornstarch before adding the shrimp just so I could adjust the smoothness and texture of the sauce. It didn’t have as much jazz as I had expected, but it was still very good and could be easily adjusted.

Hash Brown Waffles

After reading the reviews, I followed the other reviewers’ suggestions of adding onions, thinly spreading the potatoes onto the waffle griddle, and cooking smaller waffles for five minutes. If you are making smaller waffles as I did, I recommend preheating your oven for 200° to keep them warm while the others are cooking because it does take some time to cook them all.

Hunnybunch's Special Apple Muffins

This is a wonderful little muffin that is perfect with your morning cup of coffee. It’s not too sweet, and biting into the little chunks of apple is delightful. I sprinkled sugar on the top to add a little jazz. I made half the recipe resulting in 8 muffins.

Italian Style Chicken Escalopes with Wine and Lemon

This is absolutely delicious. I brined the chicken for an hour and then soaked it for 15 minutes in buttermilk before coating it with the flour mixture. Because the chicken was brined I didn’t add salt to the flour mixture. The lemon and white wine made a perfect sauce. Thanks Don for sharing this fabulous recipe.

Chicken and Eggplant Alfredo

I try a lot of different recipes, but it’s not that often that I come across a recipe I absolutely love. This is one of those recipes. I cut the chicken breasts into medallions, brined them for an hour, soaked them then in buttermilk for approximately fifteen minutes, before coating them in the flour mixture. This is a keeper.

Microwave Hot Fudge Peanut Butter Pudding

If you're short on time and want to make to make an easy dessert, this recipe will work for you. It makes a good peanut butter cake base complete with chocolate sauce. Best if served immediately.

Chicken with Barley Soup

This is perfect comfort food on this cold, snowy day. I didn’t have any chicken thighs but had a chicken breast, so I actually started at step 4 of the recipe using my homemade chicken broth. I put everything but the chicken breast in a crock pot on the low setting early in the day. An hour before dinner, I added the sliced chicken breast. Just before dinner, I shredded the now cooked chicken breast and added it back into the soup. Easy, easy, easy and very satisfying.

Lemon Mousse Pie

I didn’t make this as a pie, but as a mousse to be served with vanilla cookies. As other reviewers have said, it is not too sweet and has the perfect amount of tartness. The gelatin does give it a slightly different texture, but it is still creamy and delightful.

Vanilla Wafer Cookies That Are Better Than Storebought

Just as the recipe says, this is better than any boxed vanilla wafer. This is the perfect recipe to have on hand for all those recipes you need vanilla wafers for. I’ll never buy boxed vanilla wafers again. Thanks for sharing!
