Pasta with Scallops, Zucchini, and Tomatoes

Reviewed: Apr. 30, 2014
Simple, quick, healthy and delicious, this recipe has it all. After reading the reviews, I used thin spaghetti which worked out very well. We felt it needed extra seasoning, but it was still wonderful.

Fluffy and Delicious Pancakes

Reviewed: Apr. 30, 2014
Just as the name implies, these pancakes are fluffy and delicious. I used buttermilk instead of the soured milk and omitted the cinnamon. I added frozen blueberries (habit) and they were wonderful.

Beefaroni

Reviewed: Apr. 27, 2014
I was looking for an easy recipe for a Sunday dinner which this is. I sautéed some onion along with browning the beef for some added oomph, but it was still on the bland side.

Nanny's Newfoundland Tea Biscuits

Reviewed: Apr. 27, 2014
These are a lovely little biscuit and would be perfect along side a cup of tea. The raisins add just the right amount of sweetness. I served them warm with a little butter. I made only a portion of the recipe, but I’ll be them again soon.

BonBon's Hot Fudge Sauce

Reviewed: Apr. 27, 2014
A very simple sauce that is easy to make and not overly sweet, which is our preference. I added a pinch of kosher salt, and next time I’ll add some espresso powder just to enhance the dark chocolate flavor.

Key Lime Martini

Reviewed: Apr. 27, 2014
The curdling of the cream is disconcerting, but the flavor is wonderful. I used light cream and freshly squeezed lime juice to make this refreshing cocktail.

Belgian Waffles

Reviewed: Apr. 27, 2014
Keeper alert - I don’t normally get excited about waffles. We have them every Sunday, including the dog. To me, most are pretty much like eating cardboard, thus I load them up with strawberries and whipped cream. In preparing, I halved the recipe, so I used two eggs. We could tell that this was going to be the exception when the smells started filling the kitchen. The texture is light and cakelike, the flavor is ideal for eating plain or with toppings – just perfect. Thanks for sharing!

Adding chopped fresh rosemary and freshly grated parmesan made a wonderful variation on the regular popcorn we are used to. My daughter loved it.

Pat's Mushroom Saute

Reviewed: Apr. 25, 2014
I didn’t have quite the amount of mushrooms the recipe requested (trying to use them up) but it was enough. This recipe is so easy and delicious, it made a wonderful addition to the steak I was serving.

Orange Almond Biscotti I

Reviewed: Apr. 25, 2014
I bake quite often and recognized the flour was excessive for the amount of liquid in this recipe. I used about a cup less flour. If you do this, I think you’ll like this recipe very much. Be sure to add the orange zest for a light and fresh tasting, buttery, and crisp biscotti. A simple icing of confectioner’s sugar and fresh orange juice drizzled over the biscotti dresses it up very nicely.

Coconut-Blueberry Baked Oatmeal

Reviewed: Apr. 25, 2014
A nice, healthy way to start your day. I used frozen blueberries and baked them in individual ramekins which worked out very well. I would add a little more brown sugar the next time, but it was still very good.

Danish Oatmeal Cookies

Reviewed: Apr. 24, 2014
Be forewarned, these are addicting. These were a huge hit with the family. These delicate little treasures are ideal for any gathering or just simply with a cup of coffee. I gave them a very light dusting of powdered sugar because I don’t like overly sweet cookies and it was perfect. These will look charming on your cookie platters.

Sweet, Sticky and Spicy Chicken

Reviewed: Apr. 23, 2014
I followed Molly’s advice and made twice as much sauce which was wonderful for the fried rice I served with the chicken. This was a little too spicy for my husband, but it was still very good and I would make it again, just cutting back on the spice to keep the hubby happy.

Grilled Garlic and Herb Shrimp

Reviewed: Apr. 21, 2014
I thought this was great, my husband thought it was good. I rated it 5 stars, he rated it 4 stars. I’m the cook – it gets 5 stars. This is an excellent marinade and the hint of sweetness from the brown sugar was the perfect addition.
