Toasted Marshmallow Cupcakes

I had a little difficulty with the marshmallows. This might be because the marshmallows weren’t fresh enough, who knows? They didn’t spread easily and I didn’t care how they pressed into the cake. I rectified this on the second broiled batch by microwaving the marshmallows for 40 seconds on power level 4, and then flattening them slightly before putting them on the cupcakes. It worked great. The cake itself has wonderful flavor and texture, so the combination of the toasted marshmallow and chocolate cake is a winner.

Oatmeal Pancakes with Apple Maple Sauce

This is a five star recipe but - two things: I always soak the oats in the milk to soften the oats before adding the additional ingredients which means you will need to add extra milk. Also, because I didn’t want mushy apples, I removed them during the reduction process so I wouldn’t end up with applesauce. Because of this, the texture and flavor was spot on, a great start to your day.

Great Chocolate Chocolate Chip Cookies

I’m not sure if it was because I used butter instead of margarine, or because I added extra chips and nuts that the cookies did not spread, however they were still very good and wonderful for the chocoholic.

Chef John's Ricotta Meatballs

After reading the reviews, I decided to bake the meatballs in a baking dish lightly brushed with olive oil. After they were browned, I removed the excess grease and poured the sauce over the meatballs and back into the oven they went. It worked out great. They are very delicate and good, but could use more seasoning for our tastes.

Green Onion Cakes

After reading the reviews, I decided to use Sesame Seed oil to brush each circle, and I thought I was generous with the Kosher salt and pepper that I used. However, I thought they were still bland. I wasn’t crazy about them, but my husband had several.

Kidney Bean and Sweet Pickle Salad

This is similar to the New England Bean Dip (which I love) but has a milder flavor. I cheated a little by using a pickle relish instead of chopped pickles, which added a little more liquid, but it was still really good.

Camille's Crustless Ricotta Pie

I didn’t need a full 9x13 pan so I made half the recipe, baking it in a 9 inch pie pan. I used three eggs and baked it for 60 minutes. This is an incredibly easy recipe if you are looking for a recipe that is quick to put together. It’s simple and light, and wonderful served with a fruit topping.

Caramelized French Toast

This is a perfect start to your day. I used challah bread that I had cut in one inch widths and made sure they were thoroughly soaked with the egg mixture. Despite following the recipe and video, my sauce came out a little lumpy so I just buzzed it in the blender until smooth. We loved this. Thanks for sharing!

Deb's Scallops Florentine

Because I try so many recipes, my husband is jaded and not easily impressed. So when he says he really likes a dish, that is really saying something. He thought the sauce was great, and liked the idea that it didn’t overpower the scallops. He’s already requested to have it again. I should say that I just rinsed the scallops and put them in the baking dish, and covered it with the sauce which I had cooked fresh baby spinach in. Very simple and easy. I baked it about 22 minutes.
