Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

I used raw shrimp and cooked it in the butter/garlic mixture before adding the cream cheese to maximize the shrimp flavor. I also used white wine instead of the water, and thin spaghetti. It was delicious. I highly recommend it.

Spicy Sweet Potato Chips

I used half the amount of cayenne pepper which was enough for us. The flavor was very good, however although I increased the baking time, it needed much more time. I ended up putting it back in the oven and baking for an additional 20 minutes, turning them over once again until lightly browned. I never quite got the consistency I was hoping for, but they were good.

Peppermint Meringues

I had two egg whites to use up so I thought I’d make these for the holidays. I added a drop of red food coloring just to add a little festive color. They came out beautifully, and are very sweet, perfect for your candy or cookie platter.

Recipe Group Selection for December 1, 2004 - I have found that Shorecook’s recipes are wonderful. This recipe is no exception. This is an easy candy recipe that you don’t need to watch the candy thermometer. It comes out perfect. If you love cashews, you’ll love this recipe.

Michael's Foccacia Bread

The only change I made was to omit the onion (personal preference). This was very good but because we don’t normally use a lot of salt, I wish I didn’t add the additional salt for the top. It was still very good and the bread had a wonderful texture.

Sausage and Bow-Tie Pasta Florentine

I was cleaning out the fridge and had sausage, spinach and some fusilli that I wanted to use up. Luckily, I ran across this recipe. I crumbled the sausage and browned it in a saucepan along with sliced red onion for additional flavor. It was delicious.

Despite the freshly minced ginger and garlic, this was still on the bland side. It was good, but missing something. If I were to make it again, I would add low sodium soy sauce to boost the flavor.

Baked Brie with Quebec Maple Syrup

This is a simple yet delicious appetizer. I made them in individual dishes so I estimated the amount of walnuts and maple syrup to top for each. Also, I used Grade B maple syrup (personal preference) because it has a deeper, buttery flavor.

Banana Frittata

This is a great use of bananas that are just about to go by. I made half the recipe and added 1/4 teaspoon of baking soda for lift. It’s easy to flip in a small Teflon fry pan. It made for a wonderful breakfast.

Overnight Caramel Pecan Rolls

I agree with the other reviewers that the caramel coating and sugar/cinnamon/butter for the middle needs to be increased for the ultimate roll, but it was still good and rose beautifully before baking. With those revisions, this would definitely be a five star recipe.
