Chicken Stir-Fry

This is a great little recipe if you are looking for something quick and easily adjustable to use what you have on hand. I had an abundance of sugar snap peas in the garden that I used instead of the broccoli, and used red peppers instead of green – personal preference. Be sure to use low sodium soy sauce, otherwise it will be way too salty.

Grilled Shrimp and Sausages

I tried this recipe because the combination of shrimp and sausages looked interesting. However, the cooking times for each ingredient are totally different. I’m not sure if there is a error in this recipe that you should be using precooked sausages. In any case, I used precooked sausages and then gave them a head start on the grill before adding it to the shrimp. I cooked the skewers a few minutes per side until the shrimp was cooked and turned pink. I think grilling shrimp for 15 minutes would result in a tough and rubbery shrimp. Please note that I removed the shell from the shrimp for marinating. It just didn’t make sense to me to marinate the shrimp with the shells on. What can I say? We all have our idiosyncrasies.

Mediterranean-Twist Salmon

My husband rarely rates anything five stars, but this recipe got his full approval. The topping adds wonderful flavor without overshadowing the salmon, and it makes a beautiful presentation. Thanks for sharing.

Blueberry Oatmeal Pancakes

Best Blueberry Buckle

The crumbled topping transforms this good, standard blueberry cake into something special. Out of habit, I alternated adding in the milk and flour into the beaten sugar mixture, and dusted the blueberries with flour before folding them in. I would add a little vanilla into the butter mixture next time.

Sugar Snap Pea and Berry Salad

Seasonal berries combined with sugar snap peas from the garden - how can you go wrong? I also added toasted walnuts, and tossed in the sugar snap peas raw. This made a delightful summer salad.

Sweet and Spicy Grilled Shrimp

Recipe Group Selection for June 14, 2014 – This was my first time using chile-garlic sauce and I have to say it carries a kick. I’m glad I lessened the amount of the chile-garlic sauce using only 1 tablespoon of garlic-chile sauce and 1/4 cup of honey. This was quick and very tasty.

Rhubarb Upside Down Cake II

Everyone enjoyed this easy dessert. I used a scant 1/2 cup of sugar because I knew it would be too sweet for our tastes and this worked out very well. I like the ease in making this dessert but cake mixes always have a processed taste to me so I probably won’t be making this again.

Chef John's Strawberry Ice Cream

Awesome! The fresh flavor of the strawberries shines brightly in this ice cream. Out of habit, I keep all the containers to be used in the freezer until I’m ready to fill, and the blender jar in the fridge to keep all the ingredients cold. I didn't bother with any food coloring. Definitely worth making!

Strawberry Bruschetta

While very good, we all thought it was very much like having strawberry jam on a piece of toast. I like the concept, and it’s a good starting point, but the next time I will add julienned basil to the bruschetta.

Chicken Shawarmas

Recipe Group Selection for June 7, 2014 - This is one of those recipes that you’re not quite sure if you liked it or not. Never having had tried a shawarma, I wasn't sure what to expect. I’m glad I tried it, was good for a change, but not my favorite. I’m not a fan of mayonnaise so I used Greek yogurt instead which worked out fine.

Grilled Masala Chicken with Vegetables

A light and healthy dish, but it’s a little on the bland side. Next time I would increase the seasoning to kick it up a notch. I cut the chicken into medallions, gently pounding them to a uniform size and then brined the medallions. I warmed the olive oil and added the garlic, salt & pepper an hour before preparing to allow the garlic to infuse into the oil. I love the clean up – it’s a breeze.
