Garlic Shrimp with Three Cheese Tortellini

This is an easy and flavorful pasta dish. My husband doesn’t care for sundried tomatoes so I chopped some fresh tomatoes for his portion and used sundried for mine. Everyone enjoyed it.

Applesauce Bread Pudding

As is my norm, anytime I make bread pudding I use left over bread, therefore I reduce the recipe to accommodate the bread I wanted to use. I used a combination of Tuscan and Orange/Cranberry bread. Both breads are dense, so I allowed them to sit in the mixture for about 5 minutes to absorb the liquid mixture before baking. I do recommend adding some butter to the streusel topping, because it was too dry and chewy for my liking.

Double Fudge Brownie Cookies

I don’t normally use mixes, but this gives you a quick head start in making some chewy chocolate cookies. I made the recipe as written, but if you’re like me and not a fan of almond extract, I would omit it because it is more noticeable in the flavor than I would have liked.

Quick Baked Chicken Parmesan

I followed this recipe loosely because I didn’t need quite that much. I cut the chicken into medallions to speed up the cooking process, and brined them for an hour. I didn’t bother adding water to the egg, simply dipped the medallions in the egg, and then the bread crumb mixture. I drizzled a little olive oil in an ovenproof pan, sautéing the chicken breasts for only a minute before flipping them over and then putting it in the oven. It worked out perfectly. The recipe is quick and easy and came out delicious.

Cider Donut Bread Pudding

I only had two cider donuts to use so I reduced the recipe using one whole egg. As much as I hate to admit this, I made it for breakfast, topped with vanilla ice cream and maple syrup. What a fabulous way to start the day!

Roast Beef and Gravy

I used less of the onion soup mixture than requested in the recipe, and I seared the meat first and deglazed the pan with the beef broth for added flavor. It was an easy and delicious. I’ll be making this again soon. Thanks for sharing!

Marjorie's Maple Vanilla Sweet Potatoes

Make no mistake, this is a sweet, sweet potatoes dish but I thought it was wonderful. I’m even thinking of mashing them up with some of the syrup and topping with a huge dollop of whipped cream for a dessert. Thanks for sharing!

Spicy Roasted Pumpkin Seeds

I wouldn’t call these seeds spicy, more salty, but they were still very good. I followed the other reviewers’ suggestions of using half the amount of butter, but other than that followed the recipe. Next time I would omit the salt. Using a cookie spatula was perfect for spreading the seeds evenly on the baking sheet.

This is so easy and fresh tasting, you can’t go wrong. I didn’t have quite enough basil so I added in a little dried basil and let it sit for the full ten hours. Delicious served with garlic bread. So easy and so good.

Jorge's Pasta-less Eggplant Lasagna

I loosely followed the recipe because I was using up some items in the fridge. I used some baby spinach instead of frozen, provolone instead of feta, and sausage instead of ground beef. Also, I prefer fried eggplant instead of baked which is what I did. I omitted the ketchup and diced tomatoes because my sauce was chunky. So, despite my changes, this came out beautifully.

Light Tuscan Garlic Chicken

Disclaimer – I don’t like asparagus or whole wheat pasta, so I omitted the asparagus and used my regular pasta. Also, I used dried herbs. Despite those changes, this was fabulous. I cooked the chicken and then set aside covered with foil, then cooked the remaining ingredients in that pan to capture all the chicken flavor and save on cleaning pans. At the very end, I placed the chicken in the sauce to finish. This is delicious. Thanks for sharing!

Chicken Paprika

Recipe Group Selection for October 11, 2014 - My daughter and I thought this was delicious, but my husband thought it was just adequate, thus the four star rating. I followed the recipe exactly and thought it was a very nice dish, and recommend it. It really is yummy.
