Blueberry Zucchini Muffins

This makes a nice, not overly sweet, breakfast muffin. I added a full cup of blueberries but omitted the nuts because my daughter doesn’t like them. I wrung the zucchini in a bar cloth to remove the moisture before adding it to the batter. Baking time was 30 minutes for me. Thanks for sharing!

Maine Wild Blueberry Salsa

This is a fabulous use of the heirloom tomatoes, cilantro, and jalapeno peppers from the garden. My heirloom tomatoes were very watery, so I put them in a colander while I chopped the remaining ingredients. Despite some draining, it was still watery, so I just used a slotted spoon to scoop the salsa from the mixing bowl into the serving bowl. I didn’t have the Hungarian hot pepper, but it still was very tasty.

Slow Cooker Chicken and Dumplings

I needed to cook this longer than 6 hours, so I used chicken thighs instead of breasts. In addition, I used my homemade chicken broth instead of the water, and added some carrots and celery. I didn’t have any refrigerator biscuits, so I used the dumpling recipe on this site which is so easy and works beautifully. This is easy and delicious, perfect for a busy day.

Peach Ice Cream

I have a smaller ice cream maker so I cut it back to 11 servings as recommended by another reviewer. It worked out perfect. I added a little more peach puree than was listed and the results were fabulous. Be sure to use the fresh, ripe peaches.

Zucchini Chocolate Orange Cake

Wonderful! I creamed the sugar and butter as instructed but then added the eggs and creamed until light and fluffy. I alternated adding in the milk combined with vanilla and the flour mixture just to ensure it didn’t separate. I added extra orange zest only because it smelled so good and I couldn’t resist. I’m so glad I did. The results were a delicious cake that was moist and had wonderful texture. I would omit the walnuts the next time just so the orange flavor would take center stage.

Quick Chinese-Style Vermicelli (Rice Noodles)

This was the perfect side for the spicy chicken dish I had made. The only change I made was to substitute Sesame oil for the vegetable oil. I love that it works up quick too.

Five Spice Chicken

I followed the recipe exactly, including serving it with the “Quick Chinese-Style Vermicelli” on this site as the submitter recommended. The two recipes complimented each other perfectly. I sliced the chicken very thinly, marinating it only one hour which was enough to impart great flavor. We loved it.

Spicy Alfredo Chicken Bacon Taquitos

Every once in a while you run across a recipe that knocks your socks off. This is one of those recipes for me. I used a little less chipotle sauce than was requested in the recipe but it still had that kick. I topped it with guacamole and it was perfect. This was an easy and very tasty dish. It’s a keeper!
