Salsa Verde Pork

I’m surprised a recipe this easy and this delicious isn’t illegal. I’ll be honest, I didn’t even bother to brown the pork roast or do the extra step of shredding then putting it back in the crockpot. I simply cooked it for the total amount of time and then shredded. I used a friend’s homemade green salsa which could been one reason it was so wonderful. It just doesn't get any easier or tastier than this.

Easy Onion Jam

This was very easy but a little more time consuming than I was expecting. I sliced the onions instead of chopping them because I thought it would look prettier than the chopped on the appetizers I had planned to make. I was delusional. Ah well, it had good flavor.

Honey Roasted Sweet Potatoes

For me, the correct ratio was 2 tablespoons of honey to one tablespoon of olive oil for each sweet potato. Also, I baked it for an hour because I preferred the sweetness of the carmelized sweet potatoes; I used a lot less cinnamon and seasoned with kosher salt and pepper – personal preference. These were addicting!

Toasted Marshmallow Cupcakes

I had a little difficulty with the marshmallows. This might be because the marshmallows weren’t fresh enough, who knows? They didn’t spread easily and I didn’t care how they pressed into the cake. I rectified this on the second broiled batch by microwaving the marshmallows for 40 seconds on power level 4, and then flattening them slightly before putting them on the cupcakes. It worked great. The cake itself has wonderful flavor and texture, so the combination of the toasted marshmallow and chocolate cake is a winner.

Oatmeal Pancakes with Apple Maple Sauce

This is a five star recipe but - two things: I always soak the oats in the milk to soften the oats before adding the additional ingredients which means you will need to add extra milk. Also, because I didn’t want mushy apples, I removed them during the reduction process so I wouldn’t end up with applesauce. Because of this, the texture and flavor was spot on, a great start to your day.

Great Chocolate Chocolate Chip Cookies

I’m not sure if it was because I used butter instead of margarine, or because I added extra chips and nuts that the cookies did not spread, however they were still very good and wonderful for the chocoholic.

Chef John's Ricotta Meatballs

After reading the reviews, I decided to bake the meatballs in a baking dish lightly brushed with olive oil. After they were browned, I removed the excess grease and poured the sauce over the meatballs and back into the oven they went. It worked out great. They are very delicate and good, but could use more seasoning for our tastes.

Green Onion Cakes

After reading the reviews, I decided to use Sesame Seed oil to brush each circle, and I thought I was generous with the Kosher salt and pepper that I used. However, I thought they were still bland. I wasn’t crazy about them, but my husband had several.
