Miso Soup

Absolutely delicious. I made it almost exactly from the recipe, but I doubled the quantity and added shitake mushrooms. We couldn't get enough of it. I made some onigiri to eat with it, to add a little bulk, and had a nice, light-but-satisfying meal. I will be making this alot (especially considering that the only package of dashi I could find was HUGE) Thank you so much for sharing the recipe.

Ten Minute Enchilada Sauce

I had to make a few mods. I didn't have tomato sauce so I reconstituted a can of tomato paste with water and a spash of wine. I added a tiny bit of molasses to offset the bitterness of it. I also didn't have good quality chili powder so I just used what I had, and it was still fantastic. I am going to order some proper chili powder and definitely make it again. Thanks for sharing.

Big Charlie's Gumbo

This was my first attempt at making Gumbo. It was good, but could have used more seasoning. I made it mild so my kids would eat it, and they wouldn't touch it anyway. I needed to add a ton of Tobasco to make mine right for me. All in all, it's a good recipe. I guess we're just not a Gumbo family. Thanks for sharing.

Mango Salsa

Delicious! I served this with shredded beef tacos and it added an interesting twist. I would love to try it with fish tacos. I doubled the recipe because I had company and I was worried that it still wouldn't be enough, but I found that a little goes a long way. I have a LOT left over. I'll definitely make it again, but in the original proportions.

Honey Baked Chicken II

Great on the grill, too! I was pressed for time, so I used the sauce in place of barbecue sauce on grilled chicken breasts. I divided it and used half to baste the chicken as it cooked, and poured the other half over the chicken for serving. It was delicious. I used Dijon mustard and added a tablespoon of whole mustard seeds to the sauce as well. I will definitely use this recipe again. Thanks.

Cabbage Rolls II

This was a big hit in my house. I doubled the sauce. I didn't have Worcestershire sauce so I substituted a bit of molasses and soy sauce. I also used brown rice instead of white rice. I had a hard time coming up with a side dish for this, but with a little research of online restaurant menus I settled on mashed potatoes. It was a good match. This recipe will definitely go into our rotation. Thanks for sharing.

Banoffee

I love Banoffee pie! I have never added ginger before. The recipes I have used add a little instant coffee to the whipped cream. A hint- If you have a deep enough crock pot you can simmer the cans on medium heat for 5 hours and the water doesn't cook down as quickly- you still have to watch it though. I usually only have to top it off once during the time, and it's a lot less scary.

Slow Cooker Adobo Chicken

We enjoyed this recipe very much. I didn't have a whole chicken so I made it using boneless breasts, which I shredded and served on top of the rice. It was delicious and the chicken was very tender. We are gluten free, and I adapted this recipe using GF soy sauce. FYI- Wal Mart's generic brand soy sauce is gluten free and very cheap. Thanks for the recipe. It's definitely going in my rotation.

Chocolate Chip Cookies (Gluten Free)

These are fantastic. I wanted something that was similar to Bob's Red Mill GF cookie mix (but cheaper), and this recipe is very similar- only better! I may use less chocolate chips next time, as I had a hard time incorporating all of them. After I had used up all the dough there were still quite a few in the bottom of the mixing bowl. Fantastic recipe. Will definitely make again and again. Thanks for sharing.

Shredded Beef for Tacos

Goodbye ground beef! This was amazing! I made some modifications. I used a bottle of beer in place of the wine and I added 2 tbsp taco seasoning. My husband who ordinarily dislikes Mexican food ate four servings and then announced that he was going to take the leftovers for lunch the next day. Even my picky kids gobbled it up joyfully. I love this recipe. It will definitely be in regular rotation.

Scalloped Potatoes and Pork Chops

This is a fantastic recipe. My husband found it a little bland, but my three picky kids loved it and they all had second helpings! I made a few changes. I added a sliced onion and I put the pork chops under the potatoes, as suggested by some reviewers. They turned out very tender- practically falling apart. There was a little too much liquid that I had to siphon off, but that was no problem. This recipe is definitely going into regular rotation.

Sandy's Chocolate Cake

Since some reviewers said it wasn't chocolatey enough, (and I like it really chocolatey) I added a tad more cocoa powder and a teaspoon of instant coffee powder. I was surprised at how runny the batter was. It dripped a little out the bottom of my springform pans. The cakes didn't rise much, and were a bit sunken in the middle, but I'm not sure whether that was the recipe or my fault. It tasted fantastic, and was super moist. I think if I make it again I'll reduce the sugar, leave off the icing, and just dust it with a bit of powdered sugar, as it was really, really sweet. Even my sugar-loving kids couldn't handle much of it.
