Low Fat Breakfast Cookies

I made them just like the recipe said first time and they were delicious. Second time I doubled the batch and reduced the chocolate chips in half and added chopped pecans instead. I took another reviewer's suggestion and used canned pumpkin instead of the bananas. Also added cinnamon and a little nutmeg. They were even better!

Mom's Beef Shish Kabobs

The only change I made was to leave out the mushrooms since my family doesn't like them. We marinated the meat a total of 8 hours and served over a bed of wild rice. My eight year old had seconds and said this recipe is "a keeper!" We all loved it! Thanks for sharing this delicious summer BBQ treat.

Chicken Fried Chicken

Dredge the chicken pieces in flour before adding to the egg mixture. It keeps the chicken moist inside and helps hold the coating on! This is one of my eight year old son's favorite recipes dipped in a little bbq sauce on the side! :)

Apple Pecan Corn Bread Dressing

I scaled this recipe down to make 4 servings for a family dinner. Served it with a marinated pork tenderloin and this was an AWESOME dinner (if I do say so myself!) We all loved this dressing! I froze the extra cornbread to serve with another dinner later.

Chocolate Rice Pudding

I took advice from others and added a beaten egg and a little extra cocoa powder. I also didn't have a double boiler, so I used a saucepan on low and it worked just fine and thickened up nicely. Left raisins out since my son doesn't like raisins (I do, but I don't need to eat all 6 servings myself!) Definitely would make again next time I have leftover rice. (skipped the first step).

Luscious Slush Punch

Sesame Pasta Chicken Salad

Wow! DEE-LISH dish!! The only changes I made was to scale down to 5 servings, add some peas and saute the onions for my husband who doesn't like them crunchy. Leftovers were gone the next day by lunchtime!

Overnight Tuna Casserole

I took another reviewer's idea about substituting fried onions for the green onions and used cheddar cheese soup instead of cream of celery (made it more kid-friendly). I used precooked seashell pasta and reduced the milk to 2/3 cup (another reviewer's idea). I didn't let it sit overnight, just cooked for 5 minutes in the microwave until bubbly, then put in the oven at 375 for 10 minutes until the onions were crispy. This turned out delicious!

Wheat Germ Whole-Wheat Buttermilk Pancakes

I took a reviewer's advice and substituted baking powder for the soda and they came out flat. No one in my family liked them. I don't think I will try again with the soda, though, since I don't want to run the risk of ruining everyone's Sat. morning breakfast again!

Kellogg's® Rice Krispies Treats® Original

Can't go wrong with a good rice Krispie treat, I say!! My version gets a five star, though. I add about 1/3 cup of mini M&M's sprinkled in while spreading so they don't melt. Delicious and colorful!

Mom's Best Waffles

These were delicious. I had fresh buttermilk on hand, so I substitued 1 cup of buttermilk for one of the cups of milk (used skim milk for the other cup) and also substitued 1 cup of white whole wheat flour for one of the cups of flour. My 4 year old says "these were the best waffles ever!" and my husband said they were excellent. I'm never buying bisquick again! :)

Morning Glory Muffins I

I made these over the weekend and put a couple in a plastic bag next to our coffee maker for my husband to take to work. They must be excellent because I got a call from him a couple of hours later to tell me how delicious they were and how much he appreciated me making them for him (he never calls me from work since he's usually swamped!) The only problem I have is that I now have to make them on a regular basis.... :)
