Easy Vegetable Pot Pie

This is DELICIOUS and so easy to make! I used frozen veggies instead of canned, added a few mushrooms, subbed the milk for chicken broth and omitted the egg. I also seasoned to taste instead blindly adding the pepper and thyme; I used a little of both as well as a dash of salt, onion and garlic powders.

New Year's Day Black-Eyed Peas

I love black eyed peas but had never made them before and had no idea where to begin. I used what I had at home so this recipe was more an inspiration than exact but they came out great! My changes: I used frozen peas; only 1 onion; minced garlic instead of garlic powder; turkey bacon instead of ham; chicken broth instead of water; half can of tomatoes - with mild peppers - instead of a whole can (I also didn't puree them). I served this over brown rice and both my picky boyfriend and I absolutely loved it! Not traditional but perfect on a cold winter day. I'm definitely adding this to the rotation.

Baked Dijon Salmon

This was really quick and easy to make. I modified the recipe based on my own preferences (lite soy sauce instead of butter) and what I had at home (regular mustard; sugared almonds instead of pecans; italian seasoned breadcrumbs) and it still came out great. We eat a ton of seafood at my house and are always looking for a different preparation that doesn't take a lot of time. This will definitely be put in the regular rotation.
