Pecan Crackers

I used the suggestion of club crackers and used pecan chips instead of chopped. I also added coconut to half a batch. A quick, easy, and delicious treat! I've already passed on the recipe to 2 coworkers who absolutely loved these! I will be making them again.

Zucchini Bread

Excellent bread with the suggested modifications of less sugar and some maple syrup as well as the wheat flour. Also I did dry the zucchini, used milk chocolate chips, and decreased the baking time. Its my new bread recipe - can't wait to try it with bananas!

Chess Cake

The whole family loved this dessert! I used a lemon cake mix rather then yellow and it added a great summery flavor. I will be making this again and trying different flavors. I am glad I cut the bars small as they are very rich - but you can always have two!

Mmm-Mmm Better Brownies

These brownies got absolutely rave reviews when i brought them into the office. I used butter instead of vegetable oil as suggested, and godiva hot chocoate and semi-sweet chocolate chips instead of the unsweetened cocoa powder. This is my new brownie recipe! AMAZING!

Quick and Spicy Chili

This chili is fabulous! We love the combo of the masa harina flour with the heat of the peppers. It gives just the right balance to both flavors. We've used serrano peppers as well to add more of a smoky flavor. Always a crowd pleaser!

Scalloped Potatoes and Onions

The best scalloped potatoes I have ever had. It will replace my mother's recipe its so good! I made it with ham for a perfect winter meal. I also added some purple potatoes for color and it looked and tasted lovely!

Slow Cooker Reuben Dip

Everyone who tried this dip really enjoyed it. It was easy to make and fun to have something different to bring to a party. I used freshly baked pumpernickel bread cut into 2 inch squares rather then the rye. Yummy! I had multiple requests for the recipe. I will definitely keep this in my cookbook for future gatherings.
