Marshmallow Fondant

Reviewed: Jan. 30, 2012
This is my 'go to' recipe for fondant!! Super easy to make in my Kitchen-Aid. I just use the bowl as the top pot for a double-boiler, then transfer it to my machine. I add food coloring while the marshmallows are melting. You MUST use lots of conf sugar when rolling out!! But this is SO much cheaper than store bought, and tastes better than anything around. You'll be a hero if you choose to make this!

HUGE hit! Super easy to make. We used the ingredients, and just adjusted to our taste & size. Made it in a 9x13 cake pan. Even the nieces & nephews loved it.

Chocolate Chip Pudding Cookies

Made with Banana Cream pudding & peanut butter/chocolate chips, you can never go wrong! You'll be lucky if a batch lasts 2 days, so better make it a double!

Chai Tea Mix

Reviewed: Jan. 15, 2008
As good, if not better, than the stuff you pay $5 a cup for at the coffee house! Followed others suggestions & only used 1.5 cups sugar, and was perfect. Gave this out for Christmas to several friends & now I'm getting calls because they're almost out! Love this chai & will keep this recipe.

Molasses Sugar Cookies

Reviewed: Jan. 15, 2008
I don't like molasses, but these cookies are awesome! I cooked mine for 10 minutes, and then froze them, as they were for Christmas & I made them 2 weeks ahead. They froze great! You couldn't even tell.

Praline Sweet Potatoes

Reviewed: Jan. 15, 2008
The BEST sweet potatoes ever! I use Mexican Vanilla instead of traditional extract & everyone thinks there's marshmallows in it! This dish is requested at holiday dinners, even if I'm not going to be there. It has turned into more of a dump recipe for me, but all the ingredients are the same. It's great without the topping too, for those who don't care for nuts.

All-Day Apple Butter

Reviewed: Oct. 2, 2009
This recipe is delish! The worst part is the peeling, coring & chunking up. I set it up about 8pm & take the cover off about 6am, then let it cook down for about 2 hours. Stirring it with a wire whisk really helps with the texture. I've done with all white sugar & half white/half brown. Both are awesome. Freezes well.

Best Egg Rolls

Reviewed: Jan. 30, 2012
Excellent! Not 5 stars, because I did make some changes. I used fresh ginger, instead of dried. I also doubled the pork mix, and then split it in 2 bowls. In 1, I used a coleslaw bagged mix, in the other a broccoli slaw bagged mix. Then, I sprinkled some soy into each bowl, maybe a Tbs, and some sesame oil, maybe a Tsp. Used canola oil. These are so easy and SO delicious!

Company Chicken Pasta Salad with Grapes

Reviewed: Oct. 2, 2009
4 stars, as it dries out over night. Taste is fantastic. I use a rotiserrie chicken from supermarket deli & red and green grapes for color variation.

Sausage Gravy I

Reviewed: Jan. 15, 2008
I've made this quite a few times, and seem to change it every time. If you don't have bacon grease on hand, more butter is a good substitute. I tried it with white pepper one time, and the taste seemed off, so I wouldn't recommend that. All in all, it's a recipe I love.

Kerry's French Toast

Reviewed: Jan. 15, 2008
This is a Sunday morning staple in our house. I also added vanilla, as I put it in everything. If you find the filling too sweet, simply put less between the slices of bread. You still get all the flavor that way. An awesome breakfast for a school snow day!

Meatball Orzo Soup

DELICIOUS!! I added a few things, but I'm sure as-is the recipe is a 5! I added 1 shredded carrot & a little extra orzo, as it's my family's favorite. An easy recipe that we're gonna keep!

Belle's Hamburger Buns

Reviewed: Aug. 6, 2013
A good roll recipe, but definitely NOT buns. I made these to go with sloppy joes, so the thicker consistency was ok. However, I'll keep looking for a soft, airy bun recipe.
