Spicy Rapid Roast Chicken

This was a very good chicken. It wasn't really rapid roast though, but it turned out moist and good. I rubbed the seasonings under the skin also to give it more flavor,. I did 25 minutes at 450, 30 minutes at 400 and 30 minutes at 350, but I was also using a larger chicken. Over all, I'd make this receip again.

Baked Garlic Parmesan Chicken

This was very good. The only thing I did different was do the olive oil/garlic (added extra garlic) mixture that morning and added my chicken to it in a baggie, so the olive oil really soaked up the garlic flavor. It turned out very very good. Oh yeah...also, instead of breadcrumbs, I used stuff mix, crushed up in the blender. Made it nice and crunch.

Pasta with Hot Sausage Sauce

This was very good. I didn't have capers either, so just left those out. Hubby doesn't like the texture of chunky tomatos, so I put them all in the blender and pureed them. At first I thought it was going to be too runny, but after cooking it thickened up just perfectly. Other than that, I followed directions to the tee (although I don't measure spices). Hubby LOVED it.

Slow Cooker Spicy Black-Eyed Peas

FANTASTIC Black Eyed peas. I did soak my peas first (just always do). I used 2 fresh jalapenos, and decreased the ceyanne pepper. Instead of bacon, I bought "salted pork". It gave the beans a great pork flavor without the bacon smokiness. No salt needed due to the salted pork. They were great and I'm still eating them!

Mexican Casserole

This recipe is easy and good....but it's not all that "casseroley"....so I added in about a cup of cooked rice and that made it more filling...other then that, it's great.

Linguini with White Clam Sauce

I thought this recipe was very good, but it needed something...a little "umph" or more flavor...maybe a little more black pepper or maybe next time I'll add in a bit of red peppar flakes...but over all, we really enjoyed it. I used 3 cans of clams and juice and used 1/2 milk, 1/2 cream to give it a little more creaminess. But it was yummy and hubby enjoyed it also. I'll make again.

Barbeque Beef Casserole

I thought this recipe was pretty good. I halved it as there's only 2 of us. Used 1lb of HB and used 2 packges of cornbread mix. I followed the recipe pretty closely....drained and rinsed my meat first, then added the onion, peppers, whole can of mexi corn and seasoning. I didn't measure exactyly as I poured in the BBQ sauce, but used sweet and spicey. I did not drain my can of tomatos and it turned out perfect...not to dry, not to wet. I also added shredded cheese to the top of the meat mixture before I poured the corn bread on top....even my picky hubby liked it.

Lasagna Alfredo Roll Ups

Wow...these turned out really great! I listened to a few other reviewers and made some minor changes. Ommited Spinach (hubby eats NOTHING green).Cut up some chicken breasts really small....added in a bit of onion and seasoned with various basic seasonings...sauteed in olive oil. I mixed my chicken in with the cheese mixture right before I spread it on the noodles. When my noodles were cooked, I layed them out on a cookie sheet, on paper towels so they would dry. It was awesome....

Chicken Noodle Casserole I

Very good recipe and super easy to make. I actually put my chicken to cook that a.m. in my crock pot....so when I got home I had plenty(for other uses also). Very easy to throw togther and yummy! The only thing I changed was using the Healthy Choice line of the creamed soups instead of the full fat ones and it was great.

These were really good....but I should have read the reviews first and eliminated the breadcrumbs and egg....they were definitely meatloafy...but over all, pretty good.

Baked Spaghetti

I think this recipe is very good. I was impressed. The only thing I would change is to use less noodles so it's a bit saucier. I made according to recipe (cut down to 5 servings). The only thing I changed was instead of melted butter, I used olive oil (a bit healthier) and it came out great.

Cheesy Pork Chop Casserole

This was really good. Baking the chops this way did keep them moist. Instead of french onion soup, I used the Healthy Choice Cream of Chicken (lower salt and fat) and one can of the cheese soup. Seasoned it just a little bit. I sliced the potatoes evenly using a slicer and nuked them for 4 minutes before I put them in the bottom of the pan. I thought the soup was very thick, so I added a little milk before I poured it over the dish...don't do that...it does thin out, so my added milk was a little too much.....but still...pretty good chops.
