Grilled BBQ Meatloaf

Unfortunately, my husband and I don't share the enthusiasm of others who have tried this recipe. We found the flavor of the herb overwhelming and, therefore, did not enjoy this meatloaf. I think we would have really liked this had we omitted the tarragon.

Jambalaya

This is a good, classic Jambalaya recipe. Just the right amount of heat for me. You can always add more spice, if you like. I made a few adjustments, though. We prefer ours more meaty, so I only used 2c stock and 1c rice. Exchanged half of the chicken for shrimp, added a couple of slices of bacon, a spoonful of chicken demi glace and omitted the file. A very satisfying meal!

Southern Chicken and Dumplings

This was the first time I ever made dumplings from scratch. What a disappointment! Due to bad weather, I got home late and did not have time to read the reviews. So, I followed the recipe as written. Huge mistake! An hour after dropping the dough into the soup, the dumplings were still raw! Cut them in half, put them back in for another 20 minutes. Still raw. In half AGAIN.

Wolf's Bourbon Chicken

Holy Sodium, Batman! The soy sauce totally takes over. Cut the soy in half, and this recipe is perfect. Our 5-year-old even requests it.

Swedish Meatballs (Svenska Kottbullar)

Overall a good meatball recipe, but WAY heavy on the onions. I only used 1/2 of an onion and it was still too much. I had a hard time keeping the meatballs together because of all the onions. Plus, they didn't digest very well (if you get my drift). Use only 1/4 of an onion, finely diced, add some veggies, serve over egg noodles, and it's a great family meal.

Chicken and Corn Chowder

The soup had really nice flavor, but wasn't very filling. I doubled the onion and red pepper, as well as added a tablespoon of chicken demi glace for richness. But 12oz chicken for 6 servings was not nearly enough!!! We had to search for the chicken chunks. Next time I will double the chicken and add a roux to thicken it a bit more. Serve with oyster crackers or a nice crusty piece of bread for a hearty meal.

Aw-some Cole Slaw

Excellent basic slaw recipe! It seemed a bit sweet, so I doubled the lemon juice. And I used two green onions instead of the sweet onion.
