Ninety Minute Cinnamon Rolls

I made this with my 6-year-old, and we made it with my lactose intolerant son in my mind specifically. To make it non dairy, I subbed melted coconut oil for the butter and used almond milk instead of cow's milk. I didn't have brown sugar, so I mixed some molasses into regular sugar. We baked it in a 9x13 pan, and it turned out great. We sprinkled a touch of powdered sugar over the top and served it up!

Dave's Mocha Chicken

I really liked this and so did my hubby. :) I used 1lb. chicken breast since I didn't have chicken legs. I decreased the soy sauce to 1/2 c. and added a tsp. cocoa powder and a tsp. ginger paste and sprinkled garlic powder in before whisking all together. I ended up using a crockpot on Low for 6 hours for this recipe. I set the chicken in the bottom and poured the marinade mixture over top of it. We had leftover Asian vegetables that got added in the mix in the last few hours. The chicken easily shredded in the marinade with the veggies and it all tasted awesome scooped over steaming brown rice. YUM! Next time, I'll try it without the crockpot - prep time was a factor on this first try. :)

Zucchini Brownies

Excellent! Some of the most moist brownies I've ever had. The only thing I do different is run zucchini through my little food chopper instead of shredding with a grater (I don't actually own a grater), and it worked out just fine. I didn't have any problems either with the batter seeming dry. I just stirred the zucchini in until the moisture truly mixed with the rest of it - it wasn't as pourable as traditional brownie batter, but these brownies flew out of the pan. : ) Very good recipe, and the in-laws loved it, too!

Rolling Fondant

It was my first try at making fondant, and even though I don't own a KitchenAid mixer, I made it anyway. I just had to roll up my sleeves and knead away, and it was tough and left me with aching hands and forearms - but so worth it! I did use food coloring and had to knead it in after the initial mixing, but next time I make it (and if I know I need a lot of one color), I will add in the food color at the beginning with the water and gelatin on the stove. Also, when I made it, I didn't use cornstarch at all. I sprayed my hands down with Pam and the table as well where I kneaded the fondant. Next time I make it, I don't think I'll refrigerate it either 'cause it actually made more work for my poor hands & seemed to dry it out more, too. For my first time, I think it went well, considering my lack of kitchen appliances, and I look forward to the next time I get to play with fondant. :)

Chocolate Scotcheroos

Excellent! Missed these for a while and finally thought to seek out the recipe. Took them to a family reunion and left with an empty pan. :) I especially like the addition of butterscotch chips to the chocolate - it really set off the flavor.

Clark Gable Pancakes

I thought these pancakes were awesome! I grew up with pancakes from scratch. My dad always made them, but he didn't really go by any recipe. He's old school, measures with his hands and has no real use for written recipes...so, I came here to find a recipe. This one was it! I never had fluffier pancakes. :) Unfortunately, my husband's still a die hard fan of pancake mix from a box, but I figure it's his loss. This recipe's a keeper.

Almond Yummies

There are some major components missing from this recipe. I had to improvise to come up with something that was doughlike enough to create cookies...my improv got good reviews from the fam, but in my opinion, this recipe can't be used as is.
