About this Cook
I'm married, work from home, have two rambunctious toddlers and am also a part-time college student as well. Most anything that has to do with baking is therapeutic for me. I admire those that cook completely from scratch and want to attain that knowledge for myself as well.
My favorite things to cook
I'm willing to take a try at anything that goes into an oven. My stovetop skills still need some tuning, but I'm learning long-distance with an old friend in that area. :)
My favorite family cooking traditions
Still have yet to create some good ones for my own family. We're contemplating a homemade pizza night like that ones I grew up with. And how I miss the corn soup, venison stew and fry bread that I grew up with as a child! I still need to work on my fry bread skills, too. :) Once I get that down, my hubby wants to figure out fry bread pizza, which he had out west in Tribal Corps.
My cooking triumphs
Making my first banana cream pie from scratch, which my mother-in-law told me put hers to shame. I've also been told my carrot cake is the best, and the nieces and nephews love most any cookies I bake for them. :) Also last year's Thanksgiving dinner -- all from scratch -- that kept my hubby bragging well after it was over.
My cooking tragedies
My first attempt at biscuits from scratch. They were flat frisbees, not even fit for the birds.

Ninety Minute Cinnamon Rolls
I made this with my 6-year-old, and we made it with my lactose intolerant son in my mind specifically. To make it non dairy, I subbed melted coconut oil for the butter and used almond milk instead of cow's milk. I didn't have brown sugar, so I mixed some molasses into regular sugar. We baked it in a 9x13 pan, and it turned out great. We sprinkled a touch of powdered sugar over the top and served it up!

Dave's Mocha Chicken
I really liked this and so did my hubby. :) I used 1lb. chicken breast since I didn't have chicken legs. I decreased the soy sauce to 1/2 c. and added a tsp. cocoa powder and a tsp. ginger paste and sprinkled garlic powder in before whisking all together. I ended up using a crockpot on Low for 6 hours for this recipe. I set the chicken in the bottom and poured the marinade mixture over top of it. We had leftover Asian vegetables that got added in the mix in the last few hours. The chicken easily shredded in the marinade with the veggies and it all tasted awesome scooped over steaming brown rice. YUM! Next time, I'll try it without the crockpot - prep time was a factor on this first try. :)

Zucchini Brownies
Excellent! Some of the most moist brownies I've ever had. The only thing I do different is run zucchini through my little food chopper instead of shredding with a grater (I don't actually own a grater), and it worked out just fine. I didn't have any problems either with the batter seeming dry. I just stirred the zucchini in until the moisture truly mixed with the rest of it - it wasn't as pourable as traditional brownie batter, but these brownies flew out of the pan. : ) Very good recipe, and the in-laws loved it, too!
