Roasted Jerusalem Artichokes (or Sunchokes)

I saw sunchokes in my local farmers market and decided to be adventurous so of course I came to allrecipes to find out how to make them! This recipe was very simple and the results were yummy! My only modification was to spray the sunchoke slices with olive oil (using my misto) and toss with the herbs since we're trying to eat healthier. Can't say I missed the extra oil so I will continue to make the sunchokes this way and will definitely experiment with different herbs in the future (garlic and rosemary are next)! Thanks qwertycook for a simple and delicious recipe!

Microwave Popcorn

First let me just say I love how fast, easy, healthy, and cheap this is and with no chemicals!! Second, the only change I made was to use my olive oil mister to very lightly spray olive oil onto the kernels so it cut down on the oil to about a 1/4 tsp. I did add the salt but found that the popcorn still needed to be seasoned afterwards so I will not add salt prior to cooking next time. I sprinkled a little bit of shallot salt (that I purchased at Pensey's Spices) onto the popcorn and we loved it!! Thanks so much for such a fantastic idea!!!

Spaghetti Squash Saute

My family loved this! No one even realized it was squash until I told them! I followed the recipe exactly except that I microwaved the whole squash for 15 minutes (it was 3.5 lbs). We also sprinkled a little fresh parmesan cheese on top and it was so yummy! I will definitely be making this recipe again!!

Buttermilk Pound Cake II

This was the best cake ever and so easy to make! I made it almost exactly as written except I halved the recipe and made a few minor changes. The changes I made were to sub 1/4 of the sugar with brown sugar, upped the vanilla to 2 tsp, and used lemon juice instead of extract as this is what I had on hand. I baked in a loaf pan for exactly 1 hour and it was moist and delicious! Thanks Cathy, my family LOVED it!!

Easy Quiche

I made this recipe for brunch today and got rave reviews! The only changes I made were due to necessity (items I had on hand) So here they are: chopped fresh kale instead of spinach, 1 1/2 cups of milk (all I had) and colby jack instead of cheddar. I also added a teaspoon of garlic powder and a pinch of salt and pepper. After reading another review I opted to use muffin cups which cut the baking time down to 35 minutes and made 15 individual muffin sized quiches. This recipe is excellent and lends itself to so many different variations which means it will definitely go into my regular breakfast rotation. I'm also going to try to freeze a few "muffins" to see how well they reheat, which would make them even more convenient!

Chicken Paprikash I

I love chicken paprikash but could never make anything close to Mom's. This recipe is very close but I did change a couple of things to make it even more similar. I used boneless, skinless chicken thighs, 1 cup of sherry, 1 cup of sour cream, omitted the chicken broth, 2 chopped garlic cloves, and tons of freshly ground black pepper. I also never removed the chicken from the pot and it was perfect! I served mine on top of home made spaetzel. The leftovers the next day were even better!
