I LOVE to cook! I really enjoy trying new recipes but I almost NEVER make a recipe exactly as written (unless I'm baking) because I love to modify everything to my taste!
My favorite things to cook
Baked spaghetti, chicken francese, orange roughy florentine, roasted veggies (especially asparagus), curried chicken and rice, and chicken paprikash

Not measuring anything, just eyeballing LOL!
My cooking triumphs
I love to create new dishes out of the ingredients I have in my kitchen and I am really good at it. The only problem is that I don't write anything down...so when it comes out amazing - I can't duplicate it exactly a 2nd time!
My cooking tragedies
My first effort at making fried rice! I added the raw egg to the rice in the wok instead of cooking the egg separately...ugh...I ended up with a batch of fried mush :P

Banana Muffins II
I've made these muffins every single week since I found this recipe, we love them!! The only changes I made (after making it exactly as written the first time) are to use only 1/2 cup brown sugar, unsweetened apple sauce in place of the melted butter, and I added 1 tsp of vanilla extract. These changes absolutely are not needed as the original recipe is awesome!! I only made the changes to make them a little healthier and the vanilla just adds a little more to the flavor for me. This recipe also makes exactly 12 muffins for us. I recommend this recipe to everyone I know that likes banana muffins!

Roasted Jerusalem Artichokes (or Sunchokes)
I saw sunchokes in my local farmers market and decided to be adventurous so of course I came to allrecipes to find out how to make them! This recipe was very simple and the results were yummy! My only modification was to spray the sunchoke slices with olive oil (using my misto) and toss with the herbs since we're trying to eat healthier. Can't say I missed the extra oil so I will continue to make the sunchokes this way and will definitely experiment with different herbs in the future (garlic and rosemary are next)! Thanks qwertycook for a simple and delicious recipe!

Microwave Popcorn
First let me just say I love how fast, easy, healthy, and cheap this is and with no chemicals!! Second, the only change I made was to use my olive oil mister to very lightly spray olive oil onto the kernels so it cut down on the oil to about a 1/4 tsp. I did add the salt but found that the popcorn still needed to be seasoned afterwards so I will not add salt prior to cooking next time. I sprinkled a little bit of shallot salt (that I purchased at Pensey's Spices) onto the popcorn and we loved it!! Thanks so much for such a fantastic idea!!!
