This is wonderful. I made the filling the night before and put it in the refrigerator to chill. I left out the green olives and substituted jalapenos instead. I also put pimientos and salsa in it and it was an absolute HIT at the wedding shower I took it too. I will definately make this again. Thanks for the recipe Kathy!!!

Black Beans con Jalapeno

This recipe is wonderful. It takes a little time to cut everything up, but once it's made you'll be glad you did. Let it sit for an hour or two before you eat it to let the salt and cumin get absorbed into the ingredients. I was a little skeptical about the combination of hominy and black beans because my family can be really picky, but they loved it. Serve it with some chips and enjoy!!! I used Pace MEDIUM hot sauce, but I think next time I will use the HOT sauce to give it a little extra bite. My kids liked it like I made it this time, it was pretty mild.

Apple Crisp III

This is the best apple crisp I have ever eaten. Not to mention the easiest!! I also used 1/2 white sugar and 1/2 brown sugar in the topping and baked it for 50 minutes and it turned out wonderful. I made a 13 X 9 pan of it so I 1 & 1/2 times the recipe.Instead of the cinnamon in the recipe I substituted apple pie spice and it tasted just like the apple pies I make except it doesn't have the crust (which I prefer anyway). The only thing missing when it was done was a large scoop of vanilla ice cream on top, but I plan on having that on hand the next time I make it (which will be very soon). Thank you so much for this recipe, I am sure it will be frequently made.

Awesome Carrot Cake with Cream Cheese Frosting

This cake was wonderful. I used applesauce instead of the oil the recipe called for and it was GREAT. I think next time I will only use 1 cup of applesauce instead of 1 & 1/2 like it says. The cake was REAL moist. I also used shredded carrots and put them in my food processor until they were "grated" consistency. This cake is easy to make and the icing is too good for words. I am sure this will be asked for a whole lot in my house. Thanks for the recipe Tracy!!

Chili Chicken Stew

French Toast Souffle

This recipe is real good. It has the consistency of a bread pudding. When you put the maple syrup over it, it really tastes like french toast.

Apple Enchilada Dessert

This is one of the easiest desserts I have ever fixed. It is WONDERFUL!!!! My whole family loved it. I think next time I will make my own apple filling, but the recipe with the canned apple pie filling is still great. Thanks for the recipe.....

Cabbage Roll Casserole

This recipe is great. My mother made the Cabbage Rolls for us the long way and I couldn't tell the difference between the Rolls and this casserolle. It is great!!!
