Chocolate Chip Pumpkin Bread

So delicious and moist. I've made big loaves, mini loaves, normal muffins and mini muffins and all were superb. I double the chocolate chips because I've never thought "gee, there are too many chocolate chips in here" about anything. Also, I sub 1 cup of the white sugar with brown sugar.

Slow Cooker Thai Pork with Peppers

This was great. I doubled the recipe and added cilantro and broccoli. I added the veggies in the middle, not at the beginning. I think coconut milk would also be a great addition. The only thing I wasn't crazy about was the pork chop toughness. The flavor was amazing though.

Andy's Spicy Green Chile Pork

Very good. I substituted chicken breasts and thighs for the pork and it was great. Also added garlic, which never hurts IMHO. I liked how the recipe has you remove some of the sauce to make it a really good consistency.

Banana Crumb Muffins

I made these in normal size and mini muffins. I felt like I was putting on sooo much topping, but it was the right amount once the muffins rose, so don't be nervous about that. These muffins were fine. The topping was great, but they didn't blow me away.

Spinach and Orzo Salad

Very good. I halved the spinach, doubled the red onion, and added sundried tomatoes. I wouldn't say it's jawdropping, but it's very solid.

Slow Cooker Beef Stroganoff I

Very good. The meat is a little different from what I think of as stroganoff meat -- more fall-apart-y like stew meat, but I guess that's the effect of the slow cooker. I followed most of the recommended changes except I don't think it's necessary to saute the mushrooms and add them at the end. Putting sliced ones in raw at the beginning worked wonderfully. I used two containers of them and loved it.

Salad with Prosciutto and Caramelized Pears and Walnuts

This was pretty good but nothing so amazing that I need to make it again. The nuts came out a little soggy. It was a little sugary overall. I included the pear sauce so that is probably avoidable.

Chocolate Scotcheroos

I had these many times, but had no idea what they were. The mix of chocolate and butterscotch on top is divine. Also it's so much easier to push the rice krispies in here than with rice krispie treats where the marshmallows get hard fast. Delicious and you can cut them into tiny pieces since they are so dense and fun to eat.

Colleen's Slow Cooker Jambalaya

One of the very best recipes I've made from this site. I didn't change much. Added 4 cloves garlic. Used uncooked shrimp which actually cooked in about 20 minutes anyway and were really good. I added 3.5 cups cooked rice from the fridge at the end. The perfect amount of spicyness. You could easily serve this to company with a good baguette.

Slow Cooker Chicken Stroganoff

Stellar. I actually used 2-3X the chicken and doubled the sauce stuff. I worried that there would be too little sauce from what other reviewers said and there was TONS of good sauce so who knows. I added one chopped white onion, one package of sliced button mushrooms, and about 3/4 cups of dry white wine at the beginning, all of which I would highly recommend. The mushrooms come out perfectly browned. I also cooked the chicken for 3-4 hours whole then took it out and shredded it easily with a knife and fork. It was good to get it wet all so many surfaces for awhile and I like the shredded texture more than cubed before ever cooked. Easy and delicious and my husband worshiped it.

Chocolate Frosting II

I used just 3 c. of the powdered sugar and I had to basically double the milk to 4 T. to get it to a good, spreadable consistency. I also beat in 1/3 a bag of mini chocolate chips at the end because I love frosting that way (and so do most people I've served it to). Worked well on a yellow layer cake for me.

Chocolate Mint Dessert Brownies

Put this on top of Ghiradelli Double Chocolate brownie mix. It was excellent. The chocolate layer on top made a nice, solid layer on top of the softer minty creamy layer. I used peppermint extract and 2 drops green food coloring.

Brie Cheese Appetizer

This was gobbled up fast! I added toasted almond and pecans on top of the jam layer and on top of the entire thing, and while it was good, I think this recipe is perfect as written too. I think it does look pretty with pecans on top though!

African Peanut Soup

Ridiculously good. The vegetarian I had over thought she had died and gone to heaven. I did make it a bit heartier by borrowing from another African peanut soup recipe; I added 1 yam, 1 drained can of black beans, and 1 jalepeno. I really liked the brown rice in this recipe and the texture it gave.
