Refried Beans Without the Refry
I made these for a Mexican themed burrito night, and I have to tell you everyone loved them. The kids went back for seconds and thirds. I made mine with low sodium chicken stock, and used a little canned jalapeno, so I could control the heat. A little hint for some of you who like extra flavor.(My husband accidently warmed up the left over taco meat with the beans, and said they were even better than the first night)

Double Tomato Bruschetta
I made the spread ahead of time, in the essence of time I used canned diced tomatoes and just chopped them up smaller. I also bought presliced sourdough bread. I found I needed to flip the slices when I put them under the broiler to get both sides crunchy. They were delicious!!!

Twice Baked Potatoes
I made these for a party and they turned out great. I was able to make them before hand, freeze, and just pop them in the oven. No stress!! I left out the bacon, because it already had so much flavor, and sprinkled with paprika for color. YUM!!!!
