Eileen's Spicy Gingerbread Men

Reviewed: Dec. 29, 2008
I thought these were really good. I accidentally put in an entire teaspoon of nutmeg instead of half. No one seemed to notice! Cookies had a good, soft texture and never got hard. I was too lazy to sift the flour...don't know if that made any difference at all. They still looked adorable and tasted great.

Rich Chocolate Frosting

Reviewed: Dec. 16, 2008
Turns out perfectly! I had to cut down the recipe quite a bit because it makes a ton! That was expected based on the amount of sugar involved though. I particularly liked this when I used it to frost some brownies topped with peanut butter then this frosting. Delicious!

Aunt Millie's Broccoli Casserole

Reviewed: Dec. 16, 2008
Great recipe. I skipped the salt since condensed soup is already salty. Then added 2/3 C milk to the soup/cheese mixture, used Cheddar instead of American, and added a couple cups of cooked brown rice. Topped with cracker crumbs instead of croutons.

Mock Tuna Salad

Reviewed: Feb. 15, 2008
The texture of this kind of reminded me of potato salad. It was yummy. I used dill pickle relish instead of sweet. That's the only thing I changed.

Addictive Sweet Potato Burritos

Reviewed: Feb. 15, 2008
I made these last night and they were delicious. I cut back the recipe a bit since it was just the two of us. I thought it would be OK with or without the sweet potatoes. I also tried just mixing the bean mixture and sweet potatoes together with some cheese and dipping tortilla chips. That was also delcious. Thanks for the great recipe!
