Nanna's Banana Bread

definitely one of the better banana bread recipes i've tried from this site. i only had soymilk on hand and i had no walnuts and vanilla so i omitted those. i also cut the sugar and oil in half but i didn't notice much difference in the taste--maybe just not as sweet. i also added a third banana as someone suggested. and i mixed it by hand and the bread turned out just fine. the cinnamon adds a great flavor!

Sarah's Banana Bread Muffins

these cook very fast! at barely 30 min. they were VERY brown on top and almost burnt on the bottom. i ended up throwing them away. i'll cook at a lower temp. next time and check them after 20 min.

Carrot Pineapple Cake III

tried to half this recipe since i only wanted one cake, and ended up with way too little batter. turned out more like carrot cake bars. was done in around 30 minutes. next time i will use the full recipe to fill ONE pan. taste was pretty good though.

Drop Dead Delicious Tuna Salad

great starter recipe for tuna salad. i barely added any mayo because i don't like it, just enough to coat the mixture, but i doubled on the celery and relish since i love those a lot. i also added ground black pepper and a little mustard. this recipe is really versatile so you can put in what you like. i've made it several times, once adding macaroni and it turned out very well.

Roasted Lemon Herb Chicken

i read somewhere on this site in the cooking tips section that brining the chicken would add extra flavor so it really worked. those who found it bland may want to try that. i left out the seasoned salt, brushed on the lemon juice/olive oil mixture first then rubbed on the seasonings. stuffed the inside with lemon wedges as suggested and added a bunch of garlic cloves too. even using a smaller chicken took way more than a half hour, more like an hour and a half. used a roasting pan and left the lid off for the last half hour to crisp the skin a bit. next time will use more of the season mixture, it was almost the best part of the chicken!
