About this Cook
I am a geriatric Occupational Therapy Assistant living in Salt Lake City. I am newly married and excited about the future. I cook at least 5 times a week for my husband and whoever else will let me. I really enjoy cooking, its therapeutic for me. I loved cooking with my mom when I was growing up, but I always learned more from cooking with my dad.
My favorite things to cook
I love to cook anything spicy! I will try anything once.
My favorite family cooking traditions
Me and my husband always make breakfast together at least one weekend morning. We also make it a point to sit down and eat together each night of the week.
My cooking triumphs
I love to experiment with new recipes, and I have gained a lot of confidence because of it. I have mastered a handful of "Cortney Signature" dishes that are often requested at get togethers and dinners with friends.
My cooking tragedies
Baking is not my strong suit. I will continue to try to master this area.

Beer Roasted Lime Chicken
This chicken was good, but not terribly flavorful. I rubbed the chicken inside and out with a paste of crushed garlic, fresh lime juice, salt and pepper. It had to cook much longer than and hour and a half - in fact, closer to 3 and a half hours. BUT - I will probably make it again because it was fairly easy and tasted just as good as a rotisserie chicken bought from the supermarket.

Crustless Spinach Quiche
I was looking for a healthy meal to make tonight and came across this recipe. I added some fresh asparagus and ham cubes that I already had in the fridge. I also used parmasan cheese and only used half of what the recipe called for. It came out beautifully and it was delicious. Even my burger loving boyfriend enjoyed it

Chicken Pesto Pizza
this is the most delicious homemade pizza! definately a favorite! i just used a boboli crust it turned out great. I also added tomatoes and mushrooms for a little something extra.
