Jalapeno Popper Mushrooms

Sooo good! I used jarred jalapeños and upped the bacon a bit (because bacon is awesome) but followed the recipe otherwise and everyone loved them like crazy! I had some leftover filling I heated up the next day and dipped chips in, it also makes a fantastic dip!

Best Tuna Casserole

Made as is, except halved the recipe and skipped the mushrooms as opening a can seemed like a waste when it only called for a 1/4. It was good, but a little bland. Will make again with some tweaking to add a little zing.

Balsamic Marinated Chicken Breasts

Very tasty and juicy! Followed the recipe exactly, and left to marinate about 2 hours. I think it could use a little more garlic, and chili powder too, but overall it was a nice, healthy meal.

Traci's Adobo Seasoning

I have never had pre made adobo seasoning, so I can't say how this compares to those, but I can say this is fantastic! I made it for a coleslaw recipe(the "Pittsburgh Sandwich" recipe from this site) and it was the best coleslaw I have ever had. Then I tried it on roasted asparagus and it was amazing. Then I took another reviewers idea and put it on popcorn. Also amazing. I made a half batch this time, but will double the recipe next time I make it. Which won't be long at the rate I'm going through this stuff! I did cut back on salt a bit per other reviewers but left every thing else as written.

Tomato Crostini with Fontina Cheese

This was incredible! I did have to make a couple small changes based on what I had on hand though. I used regular diced tomatoes and added some garlic, dried basil, and dried oregano. I also didn't have fresh parsley so I used dried. I subbed provolone for the fontina as well. I can't wait to make this again!

Cheddar Bay Biscuits

This was my first time making ANY kind of biscuits and I am glad I picked this one! Loved, loved, loved them! My 4 year old had 3 he loved them so much. The butter topping is amazing, I ended up dipping mine in the leftovers. Not diet friendly, but who cares!

Bacon Wrapped Smokies

HUGE hit! I have been wanting to make these for a long time, but needed a large enough crowd to make it worth it. I made 90 of them for a party of 10 people, and they were gone quickly (even my bacon hating sister had a few-and liked them!). Everyone refered to them as "meat wrapped in meat rolled in sugar" and we all loved it. I put the brown sugar in a ziploc bag and tossed the bacon with it in there before rolling around the smokies and then sprinkled the leftover sugar on before baking. YUM!

Baked Onion Rings

I read the reviews first, and I am glad I did. I skipped the bags and just used a couple of bowls for dipping. I beat the eggs only until foamy because I was doing it by hand and I was in a hurry. Being in a hurry I also skipped both the ice water AND refrigeration tips. I used season salt, granulated garlic, and paprika to season my crumbs (just a personal preference, I don't like thyme). While it wasn't a heavy batter I had no trouble getting it to stay on(and I like a thinner crust anyways, so it worked perfect for us), and it baked up nice and crisp, though I did give them a quick spray of Pam before putting them in. My kids and my husband and I loved them, and will definitely have them often!

Classic Cuban Midnight (Medianoche) Sandwich

My new favorite lunch! I followed the recipe exactly, except I used just regular panini rolls and didn't measure the mayo and mustard, just put on to our tastes. Used leftover pork I had from a roast, and it was fantastic! I used my George Foreman to grill for a couple minutes. I can't wait to make this again!

Beer Pizza

This was actually pretty good. Not fabulous, but it had potential. I left the oil out and used fresh mushrooms instead of canned, but followed recipe exactly otherwise. It needed a little more spice I think, it was a bit bland. I will make again with some tweaks.

Chicken Gruyere with Sauteed Mushrooms

I thought this was great, and will make again for sure. I did swap the wine for chicken broth as I detest wine, even in cooking. I will make again for sure, although I will add more dill next time as I couldn't detect it at all, and I think it would add an interesting flavor.
