Chickpea Cauliflower Curry

The whole family enjoyed this dish. I accompanied it with "carrot rice." Both were delicious. I increased the amount of spices used and used cumin instead of cloves.

Best Brownies

I have to agree that these are the best. I stirred in a some chunky peanut butter to the top for my peanut butter-loving sweetheart. These will be on my short list for desserts.

Red Bean Salad with Feta and Peppers

Good bean salad recipe. Would be good served with tzatziki. A couple alterations: tomato and red onion instead of peppers and green onions, no cabbage, added chopped olives, artichoke hearts and a little dried thyme.

Orange Beef-Style Tofu Stir-Fry

Very enjoyable. I was worried that the sauce would be too watery but it thickened up to my satisfaction and rice picked up the flavorful orange sauce well. The suggestion of green peppers and pineapples was perfect. Here is a healthy alternative to deep frying the tofu. After you drain, rinse and cube the tofu, cook it on medium in a frying pan (or wok) with a light coating of non-stick cooking spray until it is golden brown on all sides. Then add the sauce and veggies. This treatment will give it a crispy texture without adding fat.

Tuscan Style Bean Soup

My toddler says this is yummy and the rest of the family seems to agree. I used green pepper instead of red and was out of onion. I also reduced the liquid content and served with cheese.
