Mijo's Slow Cooker Shredded Beef

Excellent! I made it for company and we ate it all week in various forms. I still had some to freeze. One of my guest made it though and she was not as crazy about it, she said it didn't have as much flavor even though we both followed the recipe exactly. I wonder if mine had more flavor because I assembled it the night before, and then cooked it for 9 hours the next day. I'm going to make it that way again and again.

Taco Soup VI

The was a perfect dinner for the Christmas season. I was looking to save money and calories on weekday meals so I cooked a pot of dried black beans. Half I ate with rice, the other half I used for this dish. I omitted the meat for a vegetarian dish. It was delicious!

Broccoli Rice Casserole

High Altitude Banana Chocolate Chip Cookies

Deni's Strawberry Cheese Pie

I skipped the lemon juice all together and it was yummy for a party. Lots of people requested the recipe. It was easy, pretty, delicious, and cheap.

Southern Praline Pecan Cake

I converted this for high altitude the first time I made and cooked at 375. It was the lightest cake I've ever had but too crumbly to eat with hands. Second time, I followed the instructions, still had issues but not as much. Next time I think I'll decrease the temp and then freeze. It's a great tasting cake.

Herbed Rice and Spicy Black Bean Salad

Wonderful. But agree with other reviewers, fresh herbs are a must. I don't like red wine vinegar so I used 1/2c of Annie's red wine vinegar & olive oil dressing instead of the vinegar and olive oil. It's a great brown bag lunch.
