Jamie's Minestrone

Reviewed: Mar. 3, 2015
I modified it by using beef broth and no water, a can of diced tomatoes, frozen spinach, and whole wheat pasta shells. I also added a pinch of chili and cayanne for some heat. It turned out hearty and great! Enjoy with some hot french bread.

Italian Sausage Soup

Reviewed: Oct. 17, 2013
This turned out great! Healthy and delicious. I made the following changes: • used 2 more cups of broth • added 1 chopped onion • used kidney beans and a squash • added a can of crushed tomatoes • added 2 tsps Italian spices • Added cooked rotini pasta and Parmesan on top at the end. It still could have used a tad more broth for the left over portions.

Apple Crumble Pie

Reviewed: Oct. 14, 2013
This turned out great and I had never made an apple pie before. I got the bottom crust form the store but followed these changes from others (1) added about 1/4 cup of flour to the apple mixture to absorb apple juices; (2) instead of mixing apples with 1/2 cup white sugar, I used 1/4 white sugar and 1/4 brown sugar; (3) in a bowl, mix the apples and sugars and cinnamin before putting it in the pie (as opposed to (4) I cooked it at a lower temperature for an hour and 15 minutes. I brought it to a party and it was gone in 2 minutes!

Cottage Cheese Chicken Enchiladas

Reviewed: Mar. 11, 2010
My husband LOVED this! I used flour tortillas and added olives on top. Make sure the tortillas are good and covered in sauce or they will get hard. Will make it many more times!

Apple Dip

This was a hit, I had to keep cutting up more apples to keep up with the rate at which it was being consumed! Like creamy caramel heaven!
