Traditional Style Vegan Shepherd's Pie

I made this the vegan way as described and it was wonderful! I substituted margarine for the olive oil in the potatoes because I wanted a more buttery taste. I also used a vegan pie crust and made the entire dish in a pie plate. It came out wonderful! I highly recommend Daiya brand soy cheese, it's the best!

Vegetarian Tortilla Stew

Great recipe! I also used the red enchilada sauce and 1 can of green chiles. I used the pinto beans it called for, plus a can of kidney beans in place of the veggie chicken because I don't care for faux meats in general. Kidney beans were all I had-- it was great with kidney beans, but next time I will use black beans. I used vegetable broth instead of the bouillon cube and water. I threw everything in a crock pot and put it on high for about 2 hours and it was great, but it was definitely very spicy. Additionally, I used crunched tortilla chips, shredded Mexican cheese, and sour cream as toppings for this soup and it was outstanding! If anyone is looking for a side dish/ dessert, I recommend the sweet corn cake dish that you can find in packages in the Mexican foods aisle. It made the meal feel complete.

Chocolate Pretzels

Awesome! My husband loved these and I can't wait to share them over the holidays. I made 4 types: Regular chocolate kisses with regular M&Ms; Regular chocolate kisses with Reese's pieces; Peppermint ("Candy Cane") Hershey's kisses with a regular M&M, and Hershey's Hugs Kisses with regular M&Ms. The Candy Cane kisses and the Hugs turned out the prettiest, and I thought they tasted the best too! For anyone who has a Meijer in their area, they sell the round pretzels under their store brand.

Buttermilk Corn Bread

I made this exactly how the recipe dictates and it came out beautifully. Crisp, browned bottom, soft middle, super crispy edges, held together and did NOT crumble like most cornbread, and was perfectly textured: not cakey or floury or dry. Thanks for sharing!
