Chef John's Peach Cobbler

Made it as written with an additional 1/2 t cinnamon to the peach mixture and the oven at 375 instead of 350. Mine was not runny, however I made sure to boil the peaches for a full 2 minutes at a rolling boil & that thickened them. Good taste, but I prefer a more tart cobbler and would add lemon juice or tart berries next time. The batter on this one traveled throughout & was a bit more like thick custard than the traditional cake-like dough.

Cranberry Bars

Turned out fantastic! I had only 1/2 a bag of cranberries, so subbed about 3/4 C of dried for the other half bag and added an additional 3/4 C water. Worked great!

Hawaiian Fish with Pineapple

This recipe didn't make alot of sense to me. It would be better to marinate the fish prior and not mix up a curdled milk in the pan that didn't do much except make it a pain to clean. Also it is quite bland. Had to sprinkle seafood seasoning on the fish. Would have been better marinating in coconut milk and sprinkling a small amt of lemon on prior to baking. With the price of fish, better to look for a more flavorful recipe.

East Indian Split Pea Pilaf

Green Chili Roast

No need to add that much water in our experience. 1/4 C would be plenty in the crock pot. We ended up putting it through a strainer to get rid of the excess water. We did add about 1 t cumin as another recommended and it added the extra "something" that was needed. Otherwise, it was "Ok" but not super special.

Scalloped Cabbage

Surprisingly good. I was concerned with one raters comments on the eggs scrambling, so I tempered with a couple spoonfuls of the hot milk mixture. Worked well. Would kick it up next time by adding a sprinkling of parm cheese on top. I subbed marg & olive oil for the butter and it still tasted great.

Chicken Diablo

Whoa! Spicy! Good, but I prefer a milder sauce so would halve the pepper sauce in the ingredients. Does go well with sour cream. I cooked the entire sauce instead of plating with raw sauce. It blended the flavors well.

Shrimp Fettuccine Alfredo

Really good as directed, but definitely add the cooked shrimp towards the end or they overcook and become chewy. Also, don't make the pasta until the end too or once the sauce is added to it, the cheese will cool too fast and won't stay in a smooth sauce form. FYI, the sauce takes a good 45-50 minutes to thicken so don't expect this as a "quick" recipe. Worth the wait though!

Southwestern Barley Salad

I also thought it strange that the recipe didn't have any southwestern spices. I thought it bland, so added 1/2 C salsa and 1/4 cumin and it was much better. Makes a good chip dip too.

Best Spanish Rice

I made this recipe as directed, but coming up on only 3 minutes left, there was a problem... not enough liquid. I added another cup of chicken broth, but in the end it really needed a total of 3 1/4-3 1/2 C broth. Also, the time was WAY underestimated. It took 40 minutes. Also, must be careful when "browing" the rice to not burn the onions. Otherwise, very close to restaurant-style.

Honey Cornbread

Nice fluffy cornbread, not too crumbly, not too stiff. I subbed 3/4 C milk and 1/3 C melted butter for the cream, as I didn't have any. Turned out well with just the right hint of honey, not too overpowering. Thanks

Kat's Alfredo Potatoes

Family loved this recipe and it was an easy one to take to a luncheon too. I added a dash of red pepper as another reviewer mentioned, and a generous (abt. 3T) amount of liquid smoke. I also sprinkled in a cup of fresh parmesean cheese with the swiss. Used the Ragu Alfredo, but was pleasantly surprised that the recipe didn't have a "store bought" taste or appearance. Next time I'll probably add mushrooms, and a tiny bit of either fresh red pepper or pimento would add a nice color touch too. It works equally well with substituting dried onion for the fresh with no added liquid.

Sloppy Joe Sandwiches

I was never a fan of sloppy joes growing up, but I really, really like this recipe. I took the advice of other raters and added a dash of Tabasco, some chili powder & some cider vinegar. I wanted to add some fiber to it also, so I added about a 1/4 C of Grape Nuts. Once they simmer, you can't even tell they are there, no smell, no taste, no crunchiness. Great recipe. I like it better than those with canned condensed Gumbo mixes.

Pepperoni Bread

Super fast recipe for a quick meal! I used the Pillsbury french loaf but thought it was really hard to roll out to a decent size. Going to try the suggestion of making bread machine dough to use. We also added just a little sauce inside on the second attempt and it added just the right zing. Thanks for the recipe!
