Twice Baked Sweet Potatoes with Ricotta Cheese

I have been making this every dish for every christmas eve dinner for about 5 yrs now. I plan to bring it this year for Thanksgiving. Nobody in my family including myself likes sweet potatoe, but when I make this no one can get enough...I highly recommend this dish for anyone who does not really like sweet potatoes but are willing to try them.

Lime Chicken Soft Tacos

This was GREAT! I made extra of the lime sauce and I marinted the chicken cubes for about and hour, then added the rest of tha sauce after cooking the chicken. I also added a little bit of corn starch to thicken what sauce was left it coated the chicken very well. This was very good my husband loved it. For sure one of my favorite chicken recipes now.

Orzo with Chicken and Artichokes

One Word: AWESOME! I absolutely loved this recipe. I am glad I read some of the other reviews before making it. I only used a half a box of the orzo(which was just enough) and I marinated the cubed chicken for 2 hours in some zesty Italian dressing with a tablespoon of hot sauce. At the end I put a tablespoon of corn starch in 3 tablespoons of white wine and a little water to thicken the wine sauce and let cool a little then drained it just so there was a coating of the sauce all over the chicken and spinach. I also used 3 strips of regular bacon cooked extra crispy b/c that is what I had.

Grilled Salmon I

WOW!!! This was awesome!!! I am not the biggest fish fan and this was fabulous!! I used frozen Salmon defrosted over night in some milk (discard the mike once defrosted) and then marinated it while I was at work (about 9 hours). Came home and pre-heated the oven at 425 put the salmon in foil packets and baked for 15 min... And like I said WOW!!! I totally recommend this for any body even non fish lovers....
