Banana Crumb Muffins

Been on a banana bread kick lately and had to try these out (I LOVE crumb topping). The only changes I made was to add some vanilla and chopped walnuts and bake it as a quick bread, rather than as muffins (for some odd reason, my husband is prejudiced against muffins, but loves quick breads). Anyways, I had to bake it for about 30 minutes, but it was WONDERFUL! It'll definitely be added to my quick bread repertoire. Next time, I'll try adding some chocolate chips. Mmmm, bananas and chocolate!

Jalapeno Poppers I

I made them exactly as the recipe states. Just not good. Deep fried, they're okay. Sorry, but you can't get away without frying them, and if the oil is hot enough, there is hardly any absorption. And if you fry them in a non-transfat oil, better yet. Hardly anyone knows how to deep fry the right way...sigh...

Cool Whip Cookies

Good cookie, but 8 minutes at 350 isn't nearly enough. After experimenting, 15 minutes give them a slight crunch on the edges and the middle is done. At 8 minutes, although the flavor was good, they were really doughy in the middle and all around. I'll make again @ 15 minutes.

Garlic Chicken Fried Chicken

You most certainly CAN fry to done pounded-out half chicken breasts in 15 minutes! In fact, 10 minutes (5 per side) is right for 1/4" thick. Pretty good recipe made as is. Better with potato flakes and/or saltines instead of bread crumbs for coating.

Easy Meatloaf

Four star with no topping. I've never understood meatloaf topping and don't care for it when I've had it. I don't know anybody who puts on a topping. We use gravy or Heinz 57 for dipping...no topping necessary and a tomatoey or BBQy type topping doesn't do well with gravy, which we have anyways for the mashed potatoes that go with the meatloaf. Good flavor. Next time I'll add celery salt and replace the bread crumbs with oats. Oats make for a more moist meatloaf, always, in my opinion, when the loaf is made from all ground beef...not so dense.
