Blueberry Pie

I was not very pleased with the final turnout of this pie. Even after adding an addition 3 Tablespoons of cornstarch it was still very runny and bubbled over. Boy, was that fun to clean up! The 425 recommendation for baking I felt was way too high so I baked mine on 375 for 55 minutes. The edges were getting too brown otherwise I would have let bake an additional 10 minutes as the middle was still a bit soggy. Overall, it wasn't horrible, as we still ate it. I will play around with it or find another recipe. Thanks for the post though!

Omelet Biscuit Cups

Made 12 regular size muffins filled with sausage, 4 eggs, mushroom, onion, salsa and cheese. Cooked the sausage, onion and mushroom until done. Then added the salsa, egg and cheese and cooked just until eggs started to set. Spooned into biscuits and baked for 12 minutes. Beautiful! Delicious! Easy! Thanks for the post!

Make-Ahead Baked Egg Sandwiches

These were good, quick and easy to assemble. Unfortunately, I have found it difficult to reheat after taking out of the freezer. I have had to defrost for up to 2 minutes, then heat for 45 seconds, and then have to heat the egg an additional 25 seconds for it to even be warm. A lot of work to heat it up, but the taste is good. The tricky part is getting the whole sandwich warm without melting away all the cheese or causing the english muffin to become hard. Good luck!

Chocolate Frosting I

Good with revisions... Made cupcakes last night and saw this recipe for frosting. Only read a couple reviews, but most said the chocolate flavor didn't shine through. I kept the recipe the same except added one square of unsweetened chocolate which I melted along with the margarine. Delicious! Exactly what I was looking for. (after the addition of more chocolate). ;)

Hard Candy

Made cinnamon candy with this recipe and unfortunately will probably end up throwing it all away because it lacks flavor. I suspect it was because I used cinnamon extract and not cinnamon oil. I even double the extract quantity with only a mild cinnamon flavor as a result. I may try the "kool-aid" flavoring next time. Otherwise, the texture and ease of this recipe is spot on! Thanks!

Tomato-Cream Sauce for Pasta

Stunning presentation...Amazing Flavor!! Who would have thought a little addition of cream could make something go from "good" to "heavenly"! I followed the recipe except I used fresh herbs and added mushroom and spinach to the finished product. I did not blend it like so many others as I thought it took away from the presentation. I will not change a thing WHEN I make it again. Buon!!

Jimmy's Mexican Pizza

Yummy! Like others I used what I had on hand for this dish; ground turkey, which was great! Also, I used a packet of taco seasoning with an extra dash or two of cumin, green onions, jalapenos, black beans, Mexican four cheese blend, homemade salsa and sour cream. My daughter and I enjoyed enough to put in the monthly rotation. Wonderful for a weeknight dinner!

Pork Steak Burritos

This is a great base recipe and can be "fussed up" to each households tastes. I made the following modifications to this recipe and LOVED IT! After browning the pork in the skillet I added the following; 2 t cumin, 1 t garlic, 3 T fresh cilantro, half of one small onion sliced and 3 t lime juice. After simmering to meld the flavors I added 1 small can corn and 1 small can black beans. Topped with cheese, green onions, sour cream and homemade salsa on a fresh warmed tortilla. Next time I will have avocado sliced as well...yum! With these few additions, this recipe went from Good to Awesome!! Thanks for the post!

Baked Buffalo Wings

These were the best baked "fried" chicken wings I have tried. I followed the recipe except I did not coat in the wing sauce until they were baked and had no problem with soggy chicken wings. I placed wings on foil wrapped cookie sheet with cooking spray. Cooked 30 minutes, flipped and cooked another 30 minutes. Much healthier...Thank You!

Quick and Easy Alfredo Sauce

I read several reviews before I decided to make this. I was either going to love it or hate, I decided to risk it.... I am so pleased I did!! I served with steamed brocolli and grilled chicken. I followed the recipe with a few minor modifications. Instead of 2 cups of milk I used 1 cup milk, 1 cup half + half and added a dash of nutmeg. It was very creamy. Like others, I didn't taste the cream cheese and don't know if I would add the expense of using marscapone next time. Be aware this recipe makes A LOT! I have enough for three meals for my family of three. Don't be afraid to try this!!

Blue Cheese Stuffed Mushrooms with Grilled Onions

Overall these were good. I stuffed them with blue cheese crumbles, drizzled with olive oil and "cooked" them on the grill. I sauted the onions in a skillet on the stove and added them on top of the mushrooms for presentation. I think next time I might try these with half blue cheese and half feta as the blue cheese was a bit strong for my liking. I diced up the left overs and added them to my ciche for brunch the following day which was absolutely delish!! Thanks for the post!

Classic Peanut Butter Cookies

Good recipe! I made exactly as written. Next time I will add some more peanut butter as the peanut butter taste wasn't strong enough for my liking, but after chilling I had no problem with the flat cookie problem that other reviews said, did not need additional flour. Also sprinkled with sugar. BF loved them. Thanks for the post!

Focaccia Bread

Wonderful! Have tried several other recipes for focaccia and this by far is my favorite! Made exactly as written for the exception of asagio instead of parm on the top. Yummy! Even for the inexperienced bread maker, this recipe is a no fail option! I will be making again this weekend for pizza crust. Thanks for posting!

Peppermint Meringues

It was probably my error, but these did not work for me. Everything was going smoothly until after they set in the oven for a few hours and I checked them. The top pulled right off the bottom. :( They didn't work for my office treat tray, but the taste was wonderful! May have been too humid.

Overnight Caramel Pecan Rolls

Made these Christmas eve for Christmas morning. They smelled wonderful baking! Was a little disappointed it didn't make very much caramel sauce so they were a bit on the dry side. Quick fix.....more coffee! :) Next time I might try to make an additional batch of caramel sauce for drizzling half way through. I'll play with it, but overall the whole family like them.
