Butter Chickpea Curry

This dish was excellent. My husband and I loved it, but I must say my preschoolers were unimpressed. It is a great vegetarian main dish and tastes a lot like a dish at our favorite Indian restaurant.

My husband and I loved this dish, but my preschoolers were unimpressed. I added some frozen stir fry veggies, and it made a delicious vegetarian main dish. A nice change of pace from other pasta dishes.

Banana Oatmeal Bread

This bread was moist and fabulous. I used regular rolled oats instead of quick oats, and it gave the bread a wonderful, thick texture. It is a little sweet, so I may use less sugar next time. I definitely like this oaty version better than my regular recipe.

Peanut Butter and Banana French Toast

Oatmeal Chocolate Chip Muffins

I turned this recipe into "muffin mix" for Christmas by combining the dry ingredients, chocolate chips, and pecans in a bag with instructions to add the wet ingredients and bake. I tested it first. The recipe works perfectly mixed that way, and you only need one bowl. Just let the fully mixed batter sit while the oven preheats. I also didn't notice that you were supposed to reserve part of the brown sugar and pecans for a topping, and I put it all in the mix. Nonetheless, they tasted wonderful, and I will make them again.

Winter Fruit Salad with Lemon Poppyseed Dressing

This salad was surprisingly good, and everyone liked it (even the skeptical guests). The dressing is especially tasty, and the flavors mix very well.

Chocolate Bread Pudding with Bourbon Pecan Sauce

This pudding tasted good, but it is time consuming to make it. I also think that it called for a little too much bread because my pudding turned out pretty dry. I will make it again because my husband loved it, but next time I will add less bread and watch it more closely while it is in the oven.

Stuffed Acorn Squash

This squash was really tasty, but I overcooked it a little in the microwave. I should have checked it while it was cooking, but I trusted the time given in the recipe. It was still good, but it turned out a little more "tender" than I would have liked.

Hot Spiced Cranberry Cider

I made this for a holiday party, and it was delicious. I was a little skeptical, so I also made plain apple cider. Everyone wanted the cranberry, and it was so easy to mix up that I am sure to make it again.

Connie's Zucchini "Crab" Cakes

My husband was a little skeptical, but he really loved these zucchini cakes. They do turn out awfully green. Maybe I will peel the zucchini next time before grating it, but then I think a lot of the nutrients would be lost. I added a little dry mustard to the mix, and it made the cakes even more yummy.

Strawberry Cake and Frosting I

This cake tasted really good, but the icing was very runny. Unfortunately, I did not have an extra box of confectioner's sugar on hand to thicken it. But, even though the cake wasn't very pretty, it was a big hit.

Portobello Sandwiches

These sandwiches were really quick and easy, and they tasted great! The caper-mayonnaise gives them an interesting tangy flavor. This recipe will definitely become part of my regular repertoire.
