Ham Tetrazzini

Reviewed: Jan. 2, 2014
Really good base recipe for personal tastes. We doubled the cheese and used Swiss in addition to cheddar. Also added garlic, bell pepper, broccoli, mushrooms, and black pepper. Subbed milk for the water and the result was creamy, cheesey, saucy goodness.

Cranberry Upside-Down Coffee Cake

Reviewed: Jan. 1, 2014
Really good. I was afraid the cranberries would be over-powering, but they were not. I have a 10" pan, so I used 2 cups of cranberries and 3/4 c. pecans. My cake was done after 50 minutes in a 325-degree oven. I think I will also try this recipe with tart cherries and almonds.

Ginger Chicken with Cashews

Reviewed: Jan. 1, 2014
We actually thought this dish was bland. I think using fresh ginger root or chopped ginger in a jar would have been better than ground ginger. We used reduced-sodium bouillon and soy sauce, so we didn't have a salt issue as others had.

Cream of Broccoli Soup I

Reviewed: Dec. 30, 2013
I thought the soup was too runny for a "cream" soup, even after holding back 1/2 cup of milk. I added a Tbsp of corn starch and melted 2 cups of cheddar in the soup to thicken it up. I also thought there was plenty of broccoli. It just seemed to miss the mark for me.

Dark Chocolate Cherry Fudge

Reviewed: Dec. 25, 2013
Soft and messy, even sitting overnight in the fridge. I couldn't serve this to guests. Trying to salvage it by putting in the freezer.

Spinach Brownies

Reviewed: Dec. 22, 2013
Really good and super easy! Like others, I halved the butter and sautéed onions and garlic first. I also threw in some red pepper flakes. I mixed everything ahead of time and let it sit in a bowl in the fridge until it was time to bake it. Served this as the vegetable with dinner.

Overnight Caramel Pecan Rolls

Reviewed: Dec. 22, 2013
This is my go-to breakfast recipe when I host overnight guests. I've made these many times and don't change the recipe at all. The dental floss trick works great!

Orange Pecan French Toast

Reviewed: Dec. 22, 2013
I liked how the orange came through, though it was a bit too sweet for my tastes. The caramel layer seemed thick and distracted from the French toast itself. I'm glad I tried this recipe, though it's not a keeper for me.

High-Fiber, High-Protein Breakfast Bars

Reviewed: Dec. 15, 2013
I make these regularly now and take them for a mid-morning snack at work. One batch I substituted applesauce for banana, and another batch I added a tsp. of cocoa powder. I think the original recipe is the best. Each batch I've used standard rolled oats instead of the quick-cooking oats, and I think the bars have been fine. Thanks for the recipe!!

The Best Parmesan Chicken Bake

Reviewed: Dec. 15, 2013
This was good. The croutons and cheese formed this delicious crusty layer, though it didn't stick to the chicken at all. I bought Texas Toast brand croutons which are bigger than other croutons and the larger size made it more difficult to eat. Next time, I'll look for a smaller crouton and use a smaller pan too; 9 x 13 was a bit large.

Sweet Potato Pound Cake

Reviewed: Nov. 28, 2013
A 5-star recipe that I will make again! In my opinion, a more appropriate title might be "Spice Cake with Orange Glaze". The sweet potatoes are unrecognizable in the cake and the cinnamon and nutmeg come through nicely. The texture and consistency of the cake wasn't like a pound cake to me. The orange glaze is a must, and really made the cake sing. A Thanksgiving hit; will make again!

Giant Chocolate Chip Cookie

Reviewed: Nov. 6, 2013
This IS the Nestle Tollhouse recipe. I've always had an issue with spreading the dough, and the tips about using parchment paper works! Thanks so much! If you use M&Ms instead of chocolate chips, save some to put on the top about half way through baking. If you mix them all in, you won't see them on top of the finished cookie.

Chicken a la King III

Reviewed: Oct. 17, 2013
I've tried different Chicken a la King recipes and still haven't found one that I like. To this recipe I added onion, garlic, and thyme and I still thought that there wasn't much flavor; it was just OK. I won't make this again, sorry.

Ham Cake-ettes

Reviewed: Oct. 8, 2013
My favorite aspect of these was the crunch of the panko. I ran the ham through my food processor, which I would recommend, though I still needed an extra egg to hold the cakes together. The Dijon came through nicely though the predominant flavor was the potato and these seemed like very good hash browns. I made these for a dinner main dish and it made 2 servings. Next time I'll make these for breakfast and add more ham.

Pesto Chicken Penne Casserole

Reviewed: Sep. 29, 2013
We halved the pesto and thought that was a good idea. I didn't have a 4-cheese blend, so I used mozzarella and parmesan, though my Alfredo was a 4-cheese flavor. This fit into our 9x13 pan no problem.

Hearty Vegan Slow-Cooker Chili

Reviewed: Sep. 22, 2013
This just barely fit in my 5 quart slow cooker without any extra liquid per step 2 (I didn't need the extra sauce or broth). If your slow cooker is smaller, be prepared to cut back. Good flavors.

Baked Chicken and Zucchini

Reviewed: Aug. 24, 2013
1+ zucchini per serving is a lot of zucchini, so I reduced it. I also added onion, and I think both changes worked well. I've made something similar in the past which had more black pepper in the breading, which I liked, so I will incorporate more next time.

Amazing Crusted Chicken

Reviewed: Aug. 7, 2013
I had a lot of cracker/crumb mixture left over and will prepare less next time. I don't think the mayo added all that much (except fat), and will try something else to coat the chicken with next time.

Hot Italian Giardiniera

Reviewed: Aug. 3, 2013
An excellent recipe! I can this recipe and as others mentioned, you should not use oil when canning, it acts as an insulator and may not kill any botulism cells present. I skip the oil and after you drain and rinse the vegetables, bring 4 c. vinegar, the garlic, red pepper flakes, black pepper and oregano to a boil. Add the vegetables and olives and heat through until just about to boil. Pack the vegetables and liquid in jars and process in a hot water bath for 10 minutes.

German Apple Pancake

Reviewed: Jul. 21, 2013
All the butter made it heavy and too much nutmeg for our tastes. Also read directions and plan ahead if need to; this recipe is not "Ready in 45 minutes" as the recipe page states. The batter has to "stand for 30 minutes or overnight" which is in addition to the 45 minutes.
