Simple Strawberry Sauce

Made this for strawberry shortcake. Perfect, though I didn't think it was very juicy after 10 minutes per the recipe. Mine sat in the fridge for 4-5 hours before serving and it had the right amount of sauce so that the last bite of angel food cake could sop it up.

Spicy Southwest Squash Casserole

Delicious flavor and great way to use bountiful zucchini. We added diced, cooked chicken breasts and it barely fit into a 9x13 pan. Instead of crushed crackers, we had leftover topping/breading from the "Amazing Crusted Chicken" recipe on this site. The topping from that recipe is crushed Cheez-its, crushed French fried onions, and Italian bread crumbs. Best. Substitution. Ever. We also added an additional 1/2 cup of this breading to the bottom of the dish to assist with the moisture that other reviewers commented on. Our dish was not runny at all. Will make again!

Mediterranean Chicken

This recipe is a good start; needs tweaking. Doubled the sauce and served with rice. A bit runny, but not bad. Used dried herbs, so kept those quantities as per the recipe. The dried thyme was too strong, cut back next time. Also added 1/2 t. of red pepper flakes; it was subtle. The recipe was a bit acidic with the tomatoes and wine. A bit of brown sugar might help. Also, a bit of chicken bouillon might help too.

Pretty good. I made the recipe exactly and have to agree with others that there isn't much vanilla flavor in the final product; you taste cherry/almond.

Gumbo Style Chicken Creole

Really good. Per other comments we skip the mushrooms, salt, and hot sauce. I don't like any of those three, and the Ro*Tel tomatoes are spicy enough for me. Add celery, 1/2 t. thyme, and 1 can chicken broth.

Delectable Zucchini Bites

Followed the recipe as written. There is a lot of egg, so the bites were like little omelets to me. The onion flavor was really strong; the swiss and parm flavors were very subtle. Pepper jack might be a good fit for this recipe. Overall, these were just OK to me.

Good. Subbed pecans for walnuts. The predominant flavors were cinnamon and nuts. Make sure the topping is spread evenly or any clumps will sink into the muffin.

Pork Tenderloin alla Napoli

Like many other reviewers, I served this with pasta. Don't. The sauce is best over the pork. The flavors of the sauce are subtle (and very good) and get lost in the pasta and don't leave much sauce left for the pork.

Butternut Squash Casserole

Four stars as written. Five stars with these changes: Decrease sugar to 3/4 cup, use 1 quart (4 c.) of canned squash, and skip the topping. UPDATE, this topping works well: 1 1/2 c. chopped pecan, 1/3 c. flour, 1 T brown sugar, 2 T cold butter.

There is nothing disagreeable in this dish, but it needs something more. It was rather blah to us. Pepper jack? Served this with cooked, diced chicken breasts in it. I won't be making this again.

Radio Days Cherry Custard Kuchen

I really liked that this dessert is not overly sweet. The "streusel" layer didn't really work for me as it blended into the custard layer, which is too bad, because this could really use some texture to it. I subbed raspberries and needed to bake for 45 minutes.

Notes for next time: A lot of work. Try mixing sauce ingredients early if necessary. Try subbing orange juice for orange zest. Double the sauce.

Raisin Squares

Hard to go wrong with so much butter and brown sugar! I followed the recipe exactly, though baked the bars for 35 minutes, and they still seemed under cooked. Because mine were under cooked, the middle was gooey, which some people might like. I de-frosted sour cherries from last year's harvest, though the cherry flavor didn't come through as much as I would have liked. Maybe next time I'll add more cherries or add almond extract.
