Baked French Toast

My kids loved this - beware it is very sweet and mine seemed too soggy. I think I'll cut the slices thicker than 1 inch next time.

Kids loved these. I used frozen meatballs but they were a little too big. Next time I'll make fresh so the kids can eat the with toothpicks for more fun. Anyone have a favorite chili sauce brand? Mine tasted a little too much like catsup.

Cowboy Mashed Potatoes

Excellent! Even the kids loved it, and husband - who never likes leftovers - ate it up for the next 2 days! I didn't have any jalapeno, but it didn't seem to matter. It did take more than 20 minutes of boiling for the potatoes anad carrots to soften. I wasn't sure how many for a pound, so I used 5 medium Yukons which seemed to work.

Roasted Garlic Flat Iron Steak

Excellent recipe. Really made the meat more tender than we've experienced with this cut. I didn't have time to deal with the food processor, but wisking together seemed to work fine. I also had to butterfly the steak since it was a thick cut, but it came out perfectly!

Too Much Chocolate Cake

Absolutely fabulous! I used a spring form bundt pan that made extracting the cake very simple. I'd agree that mini chocolate morsels are better if you don't like the sensation of a chunk of chocolate in every bite of cake. My DD wanted chocolate frosting (her b-day choice), which was great as a glaze, but definitely not necessary. Next time we'll dust with the powder. Thanks for a keeper!

Szechwan Shrimp

Absolutely wonderful! Even good cold or reheated the next day after it marinated a little longer. Used frozen shrimp defrosted for a quick dinner and it came out perfectly. Thanks for a keeper!

Saltine Toffee Cookies

Taste fabulous! Like many others, it was a challenge to lift the cookies from the tin foil. I'll definitely use the quick release foil suggestion from others. Here's a tip - use a pizza cutter to break into 'cleaner' squares before removing from baking sheet. Enjoy!

Mouth-Watering Stuffed Mushrooms

These were delicious, but very rich. Cream cheese taste was a little overwhelming for us. I think next time, I'll take the advice of others and add crab and/or bread crumbs to offset.

Fish Tacos

Terrific sauce, with just the right kick of spice! I just fried the fish in a pan with a bit of oil and it turned out great. Just be sure you don't cook cod too long or it will dry out. Leftover sauce was perfect for shrimp tacos the next night!

Restaurant-Style Coleslaw I

Fabulous! I followed another's advice - made the sauce the day before and refrigerated separate from the slaw until 1 hour before serving. Had one kid eating it straight from the container even after dessert!

Sesame Broccoli

Angel Hair Pasta with Shrimp and Basil

It had been awhile since I tried this, and I don't know why I waited! Even my kids were looking for 2nds! Next time, I'll add a bit more shrimp, since that's always devoured before all the pasta. Agree with others that there doesn't seem to be enough sauce, and too many chunks of tomato off to the side.

Shrimp Etouffee II

This was wonderful and easy! Even the kids love it. Only time-consuming part is chopping the veggies. Next time I would kick up the spices a bit. Definitely like it a bit hotter than the recipe calls for.

I doubled everything except the mayo/cream mix. Maybe it's the cool whip substitution that makes it runny. Husband loved it. I used pecans - trying almonds next time with a few extra thrown in for crunch.

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

My husband would give this 5 stars, but the kids and I drop to 4. Don't overbake cuz it gets dry very easily. For the frosting, I agree that melting the butter makes it too loose, but if you don't it's really hard to get all the lumps out. It's definitely a bittersweet chocoholic item, not a sugary chocolate.

Shrimp Scampi Bake

Excellent and so easy!! We actually made this on a week night! The mustard was fine as written, however, I would cut back the butter next time. Even over pasta, it was a little too greasy for my family. Shrimp came out perfectly tender.

So easy! I should have chopped the ice first. When I put the cubes in the blender, the bottom was slush and the top was still hard cubes. Otherwise, the whole drink was perfect!
