Best Ever Crab Cakes

Reviewed: Sep. 8, 2012
These were fantastic! The recipe made 16 small appetizer-sized ones. I served them with stoneground mustard, but also with a dip made of mayo, lemon, dill, pepper, and capers.

Scones

Reviewed: Jan. 11, 2012
These were phenomenal! I took the advice of others and added the milk (milk with a little heavy cream as part of it) to the egg in the measuring cup to make one cup. I pulsed the butter, sugar, flour, baking powder, and salt in the food processor, then pulsed in the butter and then added the egg/milk/cream mixture and ran the machine until it came together, then mixed in dried cranberries and sliced almonds. I only slightly kneaded it after that by hand. I formed it into two balls and then made sixteen wedges. I served them to my book group with whipped cream and blackberry preserves (and tea on the side to drink).

Whole Grain Breakfast Cookies

Reviewed: Sep. 10, 2011
Thanks for a great recipe. These are delicious and nutritious. Because I didn't have all of the ingredients on hand I needed to make some subsitutions. I used almonds instead of walnuts, peanut butter instead of almond butter, ommitted the cinnamon, used 1/4 c brown sugar and 1/8 c honey (instead of the agave). I used 1 1/2 c raisins instead of the cherries and chocolate chips.

Classic Pancakes

Reviewed: Jul. 19, 2011
These were delicious- I made them once with regular 1% cow's milk and once with unsweetened vanilla almond milk- both were excellent. I added frozen blueberries.

Pastitsio IV

Reviewed: Jul. 14, 2011
This was really good. I used leftover Trader Joe's mac n cheese (the kind from a box) in place of the noodles, and added a frozen pesto cube (ice-cube sized) to the sauce. Yum! My daughter asked if we could make it again tommorrow.

Bubble 'n' Squeak

Reviewed: Jul. 5, 2011
This was really good. I used a bag of shredded cabbage (cooked it as directed). I cooked the bacon separately and drained off the grease before adding the ingredients all together. I sauteed the onion in the butter. Yum!

Tuna Noodle Casserole from Scratch

Reviewed: Feb. 1, 2011
Delicious- one and 1/2 recipes fills a 9X13 perfectly. I left out the mushrooms, put most of the cheese in with the sauce (saved a little for the top) and only used 1 stick butter total, including the amount melted for the breadcrumbs. Yum!

Cabbage Patch Stew

This was really good. I left out the celery and picante sauce (served it with hot sauce). It only takes six hours on low. Yum!

Raspberry Cream Cheese Bars

Reviewed: Apr. 4, 2010
These are delicious. I used apricot preserves (less than the recipe called for -probably more like 12 oz) and only 8 oz of cream cheese. Also, I used regular old fashioned oats. I brought them to an Easter brunch this morning and they were gobbled up!

Oatmeal Peanut Butter Cookies III

Excellent! I used old fashioned oats and half the sugar in the cookies, and only half of the filling was plenty. Everyone gobbled them up!

Yum! I didn't add parsley but added a tsp or so of dried thyme. I served it with roasted potatoes and sauteed cabbage. My entire family loved it!

Irish Soda Bread I

Reviewed: Mar. 20, 2010
This the best soda bread I've ever eaten. It was moist and didn't taste like baking soda. I gave some to my parents and they raved about it too! I used white whole wheat flour for all of the flour and half the amount of sugar.

Penne Russo a la Vodka

Reviewed: May 4, 2007
I've made this twice over the past few weeks. Delicious! The second time I used white wine instead of vodka, but I preferred the vodka. I will add this to my "easy but good enough for company" list!
