About this Cook
I mostly work from home (part-time) which means that I have time to cook! We try to only eat out only once per week. My goal is to try at least several new recipes each week. Now that I returned to living on an island I have become more organized with my grocery lists/shopping/meal planning because my trips to Trader Joes and Costco are no longer quick outings. As a result I think that we end up spending less and eating out less.
My favorite things to cook
I love to bake (pretty much everything except pies). Due to health reasons I mainly bake for company and to give away.
My favorite family cooking traditions
My family follows Swedish Christmas traditions. We make and eat potato sausage, meatballs, coffee bread, red cabbage, rice pudding, and cookies galore.

Best Ever Crab Cakes
These were fantastic! The recipe made 16 small appetizer-sized ones. I served them with stoneground mustard, but also with a dip made of mayo, lemon, dill, pepper, and capers.

Scones
These were phenomenal! I took the advice of others and added the milk (milk with a little heavy cream as part of it) to the egg in the measuring cup to make one cup. I pulsed the butter, sugar, flour, baking powder, and salt in the food processor, then pulsed in the butter and then added the egg/milk/cream mixture and ran the machine until it came together, then mixed in dried cranberries and sliced almonds. I only slightly kneaded it after that by hand. I formed it into two balls and then made sixteen wedges. I served them to my book group with whipped cream and blackberry preserves (and tea on the side to drink).

Whole Grain Breakfast Cookies
Thanks for a great recipe. These are delicious and nutritious. Because I didn't have all of the ingredients on hand I needed to make some subsitutions. I used almonds instead of walnuts, peanut butter instead of almond butter, ommitted the cinnamon, used 1/4 c brown sugar and 1/8 c honey (instead of the agave). I used 1 1/2 c raisins instead of the cherries and chocolate chips.
