Fast and Easy Tofu Lo-Mein

Tastes just like what you'd get at a Chinese restaurant! I used one pack or Oriental and one pack of shrimp flavored ramen. Added some sesame oil, oyster sauce and baby shrimp instead of tofu. LOVED IT!

Jalapeno Garlic Tilapia Pasta

My husband said this was the best dish I had ever made. I love linguini with clam sauce, but never could get it the way I wanted. I tried this recipe and found it (only with tilapia). So so good. Even my 4 year old ate two bowls. I made a few changes though. I doubled everything in the sauce (including butter and garlic). I Didn't have any cream, so I used equal amount of evaporated milk, no lemon so I used half the amount of apple cider vinegar and left out jalapenos and cayenne pepper and used a few canned Roma tomatoes instead of fresh.

Cinnamon-Sugar Popcorn

I LOVED this. It wasn't sticky or too sweet. I'm not usually a big fan of caramel popcorn because it gets stuck in my teeth, but this didn't. The cinnamon added a nice flavor too.

One Minute Chocolate Icing

This was so so so easy, yummy and beautifully shiny and smooth. I almost didn't' want to put it on my cake, just eat it out of the bowl instead! I halved the recipe and used it for an 8x8 lemon cake. I boiled for a minute, took it off of the heat and whisked it until it was the right consistency. Make sure you don't boil a second too long or it will harden too much when cooled.

Oatmeal Peanut Butter Cookies III

Wish I could give this one more stars! This is the best peanut butter cookie i've ever had. I followed directions exactly, except adding a little extra peanut butter to both the cookie and the frosting. Maybe 1/2 cup. Sooooo good.

Flourless Peanut Butter Cookies

Very yummy. My boyfriend ate a bunch and was very surprised to learn they were flourless. He said they tasted like normal PB cookies. I added a tsp or so of cinnamon, as I do most of my cookie recipes to bring out the flavors. Will replace my regular PB cookie recipe because it's much easier, cheaper and there isn't much of a difference in taste. THANKS!!

Meatiest Vegetarian Chili From Your Slow Cooker

I tried this from the slow cooker only an hour after I started because it smelled so good. It was amazing. But when I served it five hours later it wasn't as good, just ok. Maybe I cooked it too long?

Macaroni and Cheese V

Great recipe! I made mine a little more figure friendly by only adding 3/4 c of milk with 3/4 c of chicken stock. Also to make it a complete meal I added sliced smoked kielbasi.

Fortune Cookies I

They tasted good and my four year old had fun helping me make them. They were pretty easy, I only had to make two for a test batch to get used to the folding and how long they need to be cooked. They weren't crunchy but I actually preferred them softer. They kind of tasted like an ice cream cone.

Bean Quesadillas

Very good. I substituted a can of rotell for the fresh tomatoes and green peppers and added some cumin. Didn't fry in oil, just sprayed a nonstick pan with olive oil spray and cooked for a minute on each side.
