Hoppin' John With Greens - Slow Cooker Recipe

Haven't got the time. Opened a little can of chunk ham, a can of black-eyed peas, a can of collard greens and a cup of instant rice. dumped it all in a bowl. Added a tablespoon of butter, a little dried onion, garlic, salt and pepper. Zapped it in the microwave 5 minutes. Slopped it into my little crockpot and ran out the door to the potluck. Time we ate, it was just right. I didn't reveal my secret!

Old Fashioned Strawberry Pie

Try mixing the filling and zapping it in the microwave before filling the pie crusts. Some berries are juicier than others, so you can see if you need to thicken it more before you bake it. If you're not happy with this, buy the canned stuff!

Simple Scones

I'm a grandma, and my Irish grandma used to make scones for me 50 years ago, but she just "threw things together," she said, no written recipe. Well, I just "threw this recipe together," like it said, and it was (Shhhhh!) better than hers! Now, that's going some. No food processor, so I smooshed the butter with a fork. Topped warm baked scones with buttercream frosting left over from a cooking spree with my daughter-in-law. I'm passing on old family recipes to her. Can't wait to share this one with her!
