Chef John's Meatless Meatballs

I made this and brought it to a party where everyone loved it. The only change I made was that I added fresh basil simply because I had it on hand. I will be making this again.

Low Carb Cauliflower Leek Soup

I love this soup. I wasn't able to find leeks so I used half an onion. I ended up adding a few carrots just because I had them in the house and instead of heavy cream, I used 1/2 and 1/2 and it turned out very rich and creamy. I'll be making this again. It was so good that I will double the recipe next time.

Maple Salmon

I really like this! I didn't have salmon so I used alaskan whitefish which turned out great. After reading some reviews, I reduced the sauce to thicken and added some dijon for tang. Will make again!

Too Much Chocolate Cake

This was just something I tought I'd do last night while the weather was cool enough. I don't normally bake so I didn't plan having a good outcome but I was wrong. This was a amazing. I used less oil and less chocolate chips and added cinammon to the batter. I also didn't have a bundt pan so I made it in two loaf pans. I think I undercooked it a bit but it was absolutely delicious... althoughthe reason I don't know for sure is because I only allowed it to cool for 1/2 hour.

Swiss Chicken Casserole II

The only reason I'm not giving this 5 stars is because of how salty the dish was. It was so easy and very flavorful and I will definitely make it again if I can figure out a way to cut down on the salt (subbing the soup for something else or making croutons instead of using the stuffing mix) The only modifications I made was adding roasted eggplant to add a veg and using fat free half and half instead of the milk.

Mahogany Chicken Wings

I marinated the wings for about 5 hours before baking which really infused the flavor. Next time I will marinate over night. Changes I made due to preference was that I added siracha for head and omitted the honey. Seemed like the recipe had enough sweetness without. I thought the wings were delicisious but need to figure out a way to make the skin crisp. Mine were a bit soggy.

Lemon Cream Pasta with Chicken

This was so flavorful! To suit my taste and use what I had on hand, I didn't use garlic but added some chopped onion and red pepper. I subsitituted the cream for fat free half and half to keep the fat and calorie count down and since I had fresh basil, I chopped a few tablespoons of that and added it after plating. I also added a little bit of parm cheese. Thsi is one dish I'll serve over and over again.

Braised Balsamic Chicken

I'm giving this 4 stars because it's a good recipe to start with but to me, needed some tweaking to suit my taste. Since some readers commented that the chicken was bland, I brined my chicken with salt, sugar, the spices listed in the recipe and vinegar. Instead of 1/2 cup balsamic, I used 1/4 and added 1/4 of red wine. To make the dish more saucy, I doubled the tomatoes using one can of rotel and one can of italian spiced tomatoes. After the sauce simmered and the chicken was cooked through, I thought the sauce was a little too tart so I added a tablespoon of honey to balance the flavors.

Awesome and Easy Creamy Corn Casserole

This is a recipe I make quite often but forgot to rate. My husband and I both love this. It's almost like dessert. I add shredded cheddar to the mix and then top it with another sprinkling. It's also good with the addition of chopped hot pepppers and onions.

Creamy Chicken Lasagna

This is a great alternative to traditional lasagna. I used low fat cream cheese and added cayenne. I've also tried a low carb version using grilled zuchinni strips as the pasta. Turns out great both ways.

Jezebel Sauce

I've used this recipe several times but forgot to review it in the past. I love it. I don't use an entire jar of horseradish however do add cayenne. I combine half the sauce with 8 oz. softened cream cheese, chill and serve with crackers. Everyone asks for the recipe!

Streusel Topped Pumpkin Pie by EAGLE BRAND®

I thought this pie had good flavor after using more of the spices that it called for but it was much too sweet. I plan on using this recipe and experimenting with evaporated skim milk and adding my own sugar because I like the idea of it.
