This was my first time EVER making mashed potatoes and they turned out pretty well! I used this recipe as a guide, making a smaller portion and using healthier alternatives. I used 5 small potatoes, approx. 3 tbsp. light sour cream, about 1-2 tbsp. butter substitute, some fresh pepper, and added 1/4 tsp. of garlic salt. I sprinkled a little shredded cheddar (made with 2% milk) on top before baking. Did not use chives or bacon and the potatoes still turned out very yummy! Next time I will add a little milk though.
