Super-Delicious Zuppa Toscana

Holy cow. This is so much better than O.G.'s! I made (very) few substitutions on this; My in-laws are English, and they don't like really spicy stuff, so we added two more potatoes, a bit more broth and a bit more cream to this, and reduced the red pepper just a bit. SO GOOD! This is definitely going into my steady rotation, especially for the winter. Thank you, souporsweets!

Sweet Dinner Rolls

These are perfect if you like a little "heft" to your rolls - not too heavy, mind you, but not feather-light, either. Perfect amount of sweetness, and great for sandwich rolls, too. I get rave reviews every time I make these, and they're really easy. I don't have a breadmaker, so I make these with my mini Bosch - all I do is let the yeast, sugar, and warm milk froth, add the egg and butter, whip, and then switch to the dough hook. I just add flour a half-cup at a time, and they turn out beautifully. Good luck!

Cranberry Sauce

I will never buy canned again! Super easy, and absolutely delicious! Got rave reviews at our Thanksgiving dinner, and tasted fantastic spread on a hot roll, too.

Chicken Fried Chicken

Fantastic! I only made a couple of changes - I hate it when people don't follow the recipe and then complain; but this isn't one of those! I didn't have any potato flakes, so I substituted 2 extra tablespoons of flour. I also added a tsp. of paprika, just because I like it. DIVINE!

Best Spanish Rice

Really, really good - especially considering how easy it was to fix. My only problem was that I had to add about 4 additional ounces of liquid to get the rice to cook all the way. It could be due to high altitude, but I'm not sure, so I left off a star.

Yummy Yellow Taters

I made this recipe for Easter dinner, and it was a huge hit. I think my father-in-law had 4 helpings! I made the recipe with only a couple of changes - I didn't have any fresh garlic so I used dehydrated, but I have a sweet basil plant, so I used fresh instead of the dried - also omitted the food coloring. Very tasty, very easy - definitely a keeper.

Baked Soy Lemon Chops

Just made these, and I have to say that the basic recipe is a great one to build on - I used boneless chops (fairly thin), and they only took 20 mins. Super easy, not rubbery at all - BUT, even with reduced-sodium soy, still way too salty. Also needed a bit of sweetness. I'll be making these again, but will probably reduce the soy by 1/2, add some honey, double the garlic, and maybe throw in some ginger for good measure. Good luck.

Cream Cheese Frosting II

The best cream cheese frosting ever! Excellent on devil's food cake or on Pumpkin bread, I get compliments every time I used this one. For husband's birthday, I baked a cherry chip cake in a bundt pan, frosted with this recipe, and poured cherry pie filling over the whole thing - TO DIE FOR!!!

Pumpkin Gingerbread

Honestly the best pumpkin bread recipe I've ever tried. The only thing I changed was that I used pumpkin pie spice instead of allspice (didn't have it on hand). Absolutely fantastic. Crisp on the outside, soft and moist in the middle. Definitely a keeper.

Easy Baked Chicken

I gave this 4 stars because we weren't huge on the dressing selection, but we did it again with Kraft balsamic vinagrette dressing and crushed croutons (we were out of corn flakes, but those turn out well, too), and it was wonderful! Will definitely make this again.

Tzatziki Sauce I

Very good with a chicken shawarma dish we make - the only reason it didn't get 5 stars was the absence of cucumber that traditionally goes in tzatziki. I wound up adding about 2 tablespoons of finely grated seedless cucumber, and it turned out wonderfully.

Slow Cooked Corned Beef for Sandwiches

Excellent corned beef recipe. Put everything in a slow cooker and left in for about 10 hours - turned out so tender that we could barely slice it. Used Tecate beer, (we may use something darker next time), but it was still awesome. I also may use some ground pepper along with the peppercorns just so the pepper flavor isn't "all or nothing", but this will definitely be a repeat for my family.

Cherry Enchiladas

Soooo good! It's a good thing that these need to soak overnight, because if I could eat them whenever the craving struck, I'd weigh 500 lbs. Followed recipe exactly, other than making a bit more liquid to make sure everything was covered, and they turned out perfectly. While they look a bit anemic before cooking, they come out golden brown and a lot prettier after they bake. Will definitely make again.
