Oxtails with Gravy

Fabulous ! I have milked cows and the thought of eating a piece of cow tail was never on my list of things to do. But, I ran across a pound of tails marked down from $3.99 to $1.99 a pound so what he heck. I read some other reviews, some sounded right. Boil tails and skim the scum before adding the veggies and spice, let tails and broth settle overnight then pick off about 75% of the white fat cap. Also, two pounds of tails and this recipe would be a streth for 3 servings. The gravy makes this dish, I think it is more brown sauce than gravy. I WILL be back. Thanks for the recipe !

Boilermaker Tailgate Chili

Fabulous, this recipe now belongs to me. Challenge to anyone that can find more 5 star reviews than this one. And there where many reviews that deviated from the original recipe. There was an occasional poo poo from Texas because of beans, but they make chili like they play foorball. I had to dial back on the hot beans and chiles and used beef loin cubes and it was still plenty bold. I would suggest folks not underestimate the bacon componet. Nothing can go wrong with enough bacon. THANK YOU !!

Slow-Cooked German Short Ribs

On a whim I bought a couple of pounds of bone in goat chunks, I believe my first time for goat. I could not find an interesting recipe for goat so I chose this highly rated recipe since the goat chunks looked just like short ribs. It turned out great. Goat has a very nice delicate flavor. The sauce is most excellent and has very complex flavors. I left the meat in the crock pot and thickened the sauce on the stove top since my crock pot is sort of weak on heat. THANKS FOR SHARING !!

Broiled Short Ribs

Outstanding after the greasy mess I had with trying to just broil beef ribs. As a suggestion you can add carrots and quarter large potatoes 30 minutes to the pot before the ribs are done. Also what a crime to let all that great beef broth go to waste. After ribs are broiled you can add the big old left over bones back to the pot and simmer for a while then strain for some absolutly awesome broth.
