Pumpkin Chocolate Chip Muffins
These muffins are delicious!! I have made them a couple of times now... the first time I followed the recipe exactly and the second time I didn't have semisweet chocolate chips so I used white chocolate chips instead... they were actually really good! My husband said he preferred them with the white chocolate chips. If I eat a muffin after it's cooled then I like to heat it in the microwave for about 5-10 seconds to melt the chocolate and moisten the muffin.

Best Ever Muffins
I love these muffins... I have made them a few times now with chocolate chips in some and fresh blueberries in the others. I actually didn't like it as much with blueberries, but have made them again with chocolate chips. These have such good flavor that I would actually eat them plain or just with some cinnamon and sugar baked on top. They do tend to dry out just a little bit once they cool, but if you put them in the microwave for 5-10 seconds they moisten right back up (and if you have added chocolate chips then it makes them gooey again)

Broccoli, Rice, Cheese, and Chicken Casserole
I followed this recipe loosely based on what others said they did... I used 3 cups of rice (regular, not instant), 3 cups of shredded turkey breast that I had cooked up, and only the can of cream of chicken soup and not the mushroom. I also left out the butter and decided to use red onion instead of yellow and only used about 1/3 of the onion. Instead of frozen broccoli I used fresh, which I steamed up ahead of time. I did use the amount of velveeta cheese it called for, plus I put some shredded cheddar on top. Next time I'm going to follow my version and also add either shoestring potatos or broken ritz crackers on top for some much needed crunch.
