About this Cook
I am a stay at home mom with a teenage stepson and a two year old daughter.(We are living now with my recently retired Mom and we cook for her as well.) I have been married about five years. My husband did the majority of the cooking until about a year ago. I was never bad at cooking. I could cook, he just was better and enjoyed it. I decided to take over cooking becaue my husband was on a strict diet and couldn't eat the things that he was cooking. Not really fair to him. We live on a tight budget so cooking is essential. Eating out is not budget friendly at all. I primarily look for different ways to cook the same things, so things don't become boring. I have found that I do actually enjoy cooking. My husband says he is quite inpressed by my cooking now. I have grown. I experiment more and the food is incredible. I love that. My family is happy and that's good enough for me.
My favorite things to cook
I really like cooking pork. I'm not sure why. I like to cook everything else but I really like pork.
My favorite family cooking traditions
Well, we traditionally have a huge Christmas Day lunch/dinner. I have a large family I am the youngest of 6 kids. We are all grown now and 4 out of 6 have our own families and 1 has a long term girlfriend but no kids. I have 1 brother who is a bachelor. Anyway, we get together and have a huge Christmas dinner. We usually split the menu but I have been getting the majority of the menu (I suppose cause we live with Mom). Also a Mom's tradition is baking fruitcakes. Not a favorite of mine but a tradition none the less. Since I am the youngest I was still living home with Mom when it became to physically demanding for her to mix and bake the fruitcakes. Therefore I became the offical fruitcake maker. In ten years I missed one year of fruitcake making and that was because I had just given birth.

Fluffy Canadian Pancakes
I found these pancakes rather ordinary. I wouldn't classify them as "fluffy", probably because my family is use to fluffy so I expected more since they were actually called "fluffy". They tasted okay but not anything I would be over the moon for.

Marinated Baked Pork Chops
This is a great recipe. It's fast and easy and my family LOVED it. They can't get enough. I quadrupled the recipe so there was enough gravy to put over rice or mash potatoes.
